Sailing has been part of the Summer Olympics since 1896, except for, I think, 1904. So, rowing was never the only boat based sport after motorboating was removed. Shame lightweight rowing is at its last games. The chance of an O'Donovan interview alone makes them worth it.
The Hoplite race should be brought back from antiquity. It's a footrace where the competitors were completely suited up in military gear (armor, hoplon, and spear). Imagine how that would be today with athletes suited up in modern combat gear at a designated target weight and running, say, 1500 meters.
There were so many military based events in the early days of the games that would be interesting to see modernized. Maybe as one giant Call of Duty obstacle course type decathalon.

Olympia and Athens had the hoplite race at 400m, then Nemea doubled the distance to around 800m, and then Plataea made it a long-distance event of fifteen _stadia_ or the rough equivalent to 3000m.
Germany went on a tour to visit a bunch of their neighbors and they were definitely invited during that 8 years......also Japan and the USA played an epic game of battleship

"Game of hand" sort of exists already. Handball (the version that is like racquetball without a racket, not the version already in the Olympics) is played in many parts of the world... but mostly North America and Ireland.

They split the Summer and Winter Olympics so that there is an Event every 2 years. Sure, it is still 4 years until the next Summer Games, but in 2 years there will be the Winter Olympics...

Chess is recognized as a sport by the IOC (categorized under "Mind Games") but not worthy of being in the Olympics.
