Hi Georgia, thank you for the recipe. I have tried it today it tastes great. I have noted that your sponge batter has pouring consistency but my batter came very thick. I measured everything with kitchen scale,don't know what I did wrong.
How much of the batter did you put into each tin? And if I was to use oil as the substitute for the butter, would I need to warm this up, so that the sugar dissolves better?

Is it possible to substitute sugar for something else? I tried cream cheese and mascarpone creams but for some reason I find them hard to pipe with small nozzles, and they don't really keep shape of flowers for example...hmm :/ They are absolutely delicious and not that sweet though

peachpigs it can be stored in the fridge for 2 weeks or frozen up to 3 months. Just thaw in the fridge, bring to room temperature and re whip.

Sandra In your buttercream recipe you can try and add a drop of lemon juice which will reduce the sweetness and you won't taste the lemon x
