I have heard that ghee produces excellent results and one of my favorite Indian recipes is for small-dice potatoes rinsed, drained, and patted dry fried in ghee with just a tiny bit of turmeric and salt. Heaven.@@delinquense

Have you tried goose fat to make your roast potatoes…pure heaven. And if there is any left overs, it makes the bubble and squeak amazing too! My family fights over the crispy bits, so I now make patties and fry them up so everyone gets the crispy bits that taste so much better because of the goose fat. Duck fat works well too, out goose fat is so much better.

I use basically same ingredients that you do.. 😊 My mother and grandmother made these and they were German..
My trick for keeping the potatoes from getting brown is after grating pour over them cold water then I let them set while grating onions..
It Helps take out some of the starch also.. just drain and press out the water.. Then add other ingredients..
I have gotten creative and added carrots and squash grated also..
But Nothing Is Better Than A Simple Potato Cake!. 😋
PS I use bacon grease when I have it or avocado oil.. 👍

WONDERFUL!! Goose fat like Lard is the "OLD WORLD" Secret ingredient. My grandmother's cookbook always showed to use LARD. We could never figure out why things did taste like they did when she cooked. Until that one day, I READ the little note to that side of one for the recipes. "DO NOT SUBSATUTE ANYTHING FOR LARD." So, Off to the store I went, bought some lard and tried it. THE MISSING LINK! That is what I was doing wrong. Bottom Line - Don't change what works! FOLLOW THE DIRECTIONS! (and read the notes on the side of the page).

Hello , why so many recipes have you draining the potato starch out using cloth or mesh strainer ? Does this method with the blender work by absorbing up the potato starch water ? I love this method better. It's like a potato batter adding some shredded later 1st time seeing them made this way and i am old 😅 @@grandmasgermankitchen7850

I found this fascinating. We visit Germany every few years and I always enjoyed the potato pancakes, as does my husband. I am going to surprise him and try to make them at home using your recipe. May I ask, please, as your recipe is far bigger than we could eat in a day or two, can these potato pancakes be frozen once they are cooked or even partially cooked as you did some for reheating the following day, since the frozen ones need to be thawed before warming through.
These look delicious! Potatoes and onions are one of the best flavour combos in my opinion. Thank you for sharing and I have just subscribed to see what else you will teach. ❤️🙏🏴󠁧󠁢󠁳󠁣󠁴󠁿

No other seasonings needed and it was the most delicious chicken flavor ever. I bet using goose or duck fat will really elevate the flavor of the onion potato pancakes.
