@@nicolebaskin7497 , I would put it in a paper bag inside a loosely folded-over plastic bag, after it's thoroughly cooled down of course. I often cut bread into segments for a meal and freeze it; then when I want fresh bread for lunch I pop it into my toaster oven straight from the freezer, and I have fresh bread in 6 minutes (depending on the size).

The basic principle is... bakers have known for years that a slow rise develops flavor. Recipes that want a faster rise will use warm water, but bread can rise faster than it can develop flavor. I want a slow rise. I want to develop flavor, thus I use cool water. Steve

Love your channel . I am new to do this so your help would be much appreciated.
So I have a Quick question.
I bought one 5lb bag of unbleached white bread flour and
I bought two 5lb hard whole wheat bread flour from Weisenberger Mill cause it’s so hard to find flour and yeast today online cause of the C-19 epidemic
So my question is can I use 2 cups of the wheat and 1 cup of the white bread flour. I ask this cause I bought two 5lb bags of wheat and only one white bread flour. I’m trying to use a 2 to 1 ratio with the wheat mixture since I have double of the white I bought. Sorry for the long message but I just want to make sure

Hello Steve, your recipe for breads have made us stop buying breads in my family. Every night we have a loaf or some form of bread resting for the following days needs. It is actually a nice quiet time for me to get things ready after work I always bake 2 loafs, one for us here at home and the other to share with afriend at work. I am buying the book tonight. Thank you very much.

Hi Steve 👋. I just made your rolls , light and airy , not heavy . They are delicious. I purchased 6 rolls at the food store for $2.99 for 6, I made 2 batches of rolls, plus we made our own pizza dough, still more flour to use. Most important it’s homemade 👍 thank you, I enjoy your channel thank you

This is now the fourth time I've made these rolls, they are so easy... I mix the dough late evening then shape and bake the following morning, it really is a fool proof recipe. The first time I made them the dough was really wet and difficult to shape and looked nothing like the perfect ones in the video I almost threw them out, however they rose almost perfect and the oven did the rest - I was really impressed to find a lovely crispy crust and ciabatta crumb in the centre. My Mom struggles with arthritis in her hands and is now able to bake bread without the machine and has found the same method also works well with her other recipes :)Thank you so much Stev x

I have a stone and honestly think it's just a gimmick unless you make pizza a lot. I get same crust as I do on a sheet pan with bread recipes. Does help make a great pizza crust though, more important is 00 flour imho. Big fan of using dutch oven for boules and italian loaves(my olive oil bread especially)

It's been several years since I first watched this video. I had completely forgotten it was created before Steve looked at a wooden spoon one day in his kitchen and realized he had a dough hook on the other end of that spoon. He's the the first person I ever saw use a wooden spoon handle to mix dough. Watching his method the first time he used it is what stopped me from laying down several hundred dollars for a KitchenAid Mixer just so I could have a dough hook.
