@@nicolebaskin7497 , I would put it in a paper bag inside a loosely folded-over plastic bag, after it's thoroughly cooled down of course. I often cut bread into segments for a meal and freeze it; then when I want fresh bread for lunch I pop it into my toaster oven straight from the freezer, and I have fresh bread in 6 minutes (depending on the size).
I have been using your method of baking bread for the last couple of weeks. I am DONE buying bread in the store. Your videos and recipes are outstanding. Thank You and God Bless.
The basic principle is... bakers have known for years that a slow rise develops flavor. Recipes that want a faster rise will use warm water, but bread can rise faster than it can develop flavor. I want a slow rise. I want to develop flavor, thus I use cool water. Steve
Love your channel . I am new to do this so your help would be much appreciated. So I have a Quick question. I bought one 5lb bag of unbleached white bread flour and I bought two 5lb hard whole wheat bread flour from Weisenberger Mill cause it’s so hard to find flour and yeast today online cause of the C-19 epidemic So my question is can I use 2 cups of the wheat and 1 cup of the white bread flour. I ask this cause I bought two 5lb bags of wheat and only one white bread flour. I’m trying to use a 2 to 1 ratio with the wheat mixture since I have double of the white I bought. Sorry for the long message but I just want to make sure
Hello Steve, your recipe for breads have made us stop buying breads in my family. Every night we have a loaf or some form of bread resting for the following days needs. It is actually a nice quiet time for me to get things ready after work I always bake 2 loafs, one for us here at home and the other to share with afriend at work. I am buying the book tonight. Thank you very much.
I made a batch of these. When my son came home and had one he said "Did you really make this or did you get it from the grocery store?" It's THAT good! And SO effortless to make.
Hi Steve 👋. I just made your rolls , light and airy , not heavy . They are delicious. I purchased 6 rolls at the food store for $2.99 for 6, I made 2 batches of rolls, plus we made our own pizza dough, still more flour to use. Most important it’s homemade 👍 thank you, I enjoy your channel thank you
This is now the fourth time I've made these rolls, they are so easy... I mix the dough late evening then shape and bake the following morning, it really is a fool proof recipe. The first time I made them the dough was really wet and difficult to shape and looked nothing like the perfect ones in the video I almost threw them out, however they rose almost perfect and the oven did the rest - I was really impressed to find a lovely crispy crust and ciabatta crumb in the centre. My Mom struggles with arthritis in her hands and is now able to bake bread without the machine and has found the same method also works well with her other recipes :)Thank you so much Stev x
When I was 18-20 I used to make all kinds of bread with sourdough starter. Time passed. Now 60 I restarted because store bread became disgusting and expensive. There are tons of videos on UA-cam but I like your simplicity. The bread is awesome 👌
I love to watch you before I go to bed , your voice sooths me and relaxes me for the night, I love that you don't have much in background. Thank You. !
Great recipe, thank you. I like my bread a little crunchier, and tougher.. so I baked my rolls for 22 minutes instead of 15 minutes like the video suggest.. ...this recipe is a keeper!! thanks again :)
I absolutely love your recipes and videos! I've bought 2 of your books and have told all my friends about your videos. My family is thrilled that I've started using your recipes! These look delicious and will be my next experiment. Thanks Steve!!!
I made some sandwich rolls today using your recipe. I don't have a stone, so I slid my parchment onto a pre-heated sheet pan. They came out great! This is the second time I have followed your no-knead method. I am a definite convert. Thanks for posting your videos.
I have a stone and honestly think it's just a gimmick unless you make pizza a lot. I get same crust as I do on a sheet pan with bread recipes. Does help make a great pizza crust though, more important is 00 flour imho. Big fan of using dutch oven for boules and italian loaves(my olive oil bread especially)
Just made the sandwich tonight..... fresh bread is the only way to go! I sprinkled on Italian seasoning on the egg wash instead of sesame seeds (I was out of)....... the fresh warm roll was so good.......... Thanks so much for teaching.... .
+artisanbreadwithstev Have been making your bread since finding you on UA-cam. The dough is very forgiving. No way to screw up this recipe. Also want you to know that we bought your book. Way to go Steve, you are awesome!
It's been several years since I first watched this video. I had completely forgotten it was created before Steve looked at a wooden spoon one day in his kitchen and realized he had a dough hook on the other end of that spoon. He's the the first person I ever saw use a wooden spoon handle to mix dough. Watching his method the first time he used it is what stopped me from laying down several hundred dollars for a KitchenAid Mixer just so I could have a dough hook.
I have my first batch proofing now to bake tomorrow. Can hardly wait! I’ve been drooling over your videos for two days. Enough already. Picked up the flour and yeast on the way home from work. Call for backup!! I’m going in!!
Thank you so so so much!!!! I love all your recipes; they help save our vegan life in Harbin China!!! I use your recipes to make all kinds of vegan burgers, dinner rolls, pizzas, and cinnamon bread. My husband loves them!!! Thank you again~~
I have cooked and grilled all of my life, but I have always been afraid of baking. Steve makes it so easy to get into the art of baking bread. The thing about his recipes are, 1) they are delicious, 2) they are pretty easy for the average person to prepare, and 3) they got me into baking so if I want to get more serious, at least I am not afraid to try now! Thanks, Steve! PS...Love the book!
I 💘you steve. Because you are straight with all the ingredients!!! Putting them all together and then rest. I was so mad the other day following a recipe. My lord!!!! Took like a day in a half!! And i work a full-time job and my husband works over nights! It was so frustrating!!!
Those look incredible! I love your recipes - too old for all that kneading now, but I miss baking bread. I'm gonna try! I don't have a paddle, but I bet turning a cookie pan upside down will work...
OMG!! Steve, you gave me the courage to bake bread. I can't remember the last great tasting bread...you can't find it in the grocery stores. Your recipe NAILS it, along with your step by step videos!! I will never buy another loaf of bread again!!
I love all your videos. All your recipes are easy to understand and follow. This recipe is now my family's favorite! The taste is "perfection". I'm making these (smaller/sliders) to be included with our 2017 Thanksgiving dinner this year. Thanks so much for sharing your Art with us. Your bread recipes are the best!

I made these today. I wanted a sturdy ciabatta roll for meatball subs. I made delicious meatballs, sliced pepperoncini peppers along with sweet onions and grated mozzarella cheese. I served them with plenty of sauce and They are amazing and so easy! Thanks for sharing this method. The meatball subs were the best I have ever had in my life. I will never buy another cibatta roll again!!
I’ve been watching all your videos the past few days. There is no decent bread left on the shelves since the Coronavirus hoarding has started. Luckily I’m still able to work which leaves little time to bake. Your method seems perfect for my time constraints. I have some proofing now and will bake it in the morning. I made your beer bread in the PMDO. Thank you so much Steve for making clear and easy to understand videos.
HI Steve you jave given me the confidence to make bread yesterday in Toronto (lockdown) I did the PMDO and made the oatmeal whole wheat multigrain simply excellent tks again
As I watch this video, I am waiting for UPS to bring me all of your cookbooks. I can't wait to try the simpler method of making bread and rolls! I've been making them the long and arduous way for years. Baking starts tonight and tomorrow fresh bread!
That's what I do. I love the crust nice and crunchy. Never could understand cutting off the crust it's the best part! Wonder bread? It's a wonder they can still sell it! Same thing with potatoes. Why would you ever peel them? And yes I'm talking mashed and fries.
