- In this video I show you how to make two separate versions of a French 75. One with gin and the other with cognac! The recipe with gin was the original, but later the cognac version became popular in many bars. In my opinion, the brightness of the gin is ideal for warmer weather, while the roundness of the cognac makes it my choice for the cooler months. Either way, both versions make for a festive cocktail that is perfect for any celebration! Cheers!

2 oz. (60 ml) Crémant de Bourgogne Brut sparkling wine
1 oz. (30 ml) Plymouth Gin OR Maison Rouge V.S.O.P. Cognac
1/2 oz. (15 ml) fresh lemon juice
1/2 oz. (15 ml) simple syrup
Lemon twist for garnish

Had to wince when the cocktail was knocked over at the end. I literally dropped three cocktails, a lemonade and a beer directly on the floor in front of a guest's table last night and watching the French 75 tip over gave me flashbacks lol

Made the French 75 with London Dry and it was delicious. Everyone wanted seconds, and thirds. Amped up the lemon and syrup in the second version and every liked the initial dryer version. Hence the “thirds”

Don’t drink the 75 very often, but when I do....! Great session, loved that AZ put the camera on autopilot f a bit! Oh, yeah, and I love the extended outtake.
We serve these in a coupe glass - with a much shorter lemon twist 😄. The coupe just makes it seem fancy, I think. We had a few customers start to order it with Empress 1908 gin and it does make for a visually appealing cocktail. Gives it a nice lavender color similar to an aviation.

Fun fact; In Belgium we call the minimal noise when you open a bottle of sparkling wine (champagne, cava, proseco, etc) a "Nun's fart".
It's the noise when you can just barely hear it.
Not sure if other parts of the world have a name for that noise, or if the term is a global thing.

I’m watching this in preparation for new years but I thought I’d mention this. I work at the WW1 museum in KC and one day while wandering around a fellow volunteer came up to me and pointed out our real French 75 gun. It’s a relatively small piece of artillery compared to the rest of the stuff we have. It’s about chest height. And it was inordinately simple. No weird magazine hold you canon shape but it apparently is known for it absurd rate of fire. I was told a story that apparently during a certain battle it was being fired so quickly that they got a guy to place wet rags on the barrel so it didn’t overheat. It had a really horrific nickname but I can’t remember it and for some reason it feels too macabre to mention.

This was among the cocktails we offered at our neighborhood New Years Eve gathering. They quickly became the only cocktail requested, almost everyone became overserved. Navy strength gin. No worries, everyone was walking home.

You’ve probably mastered the ribbon by now, but in case I’m wrong…try wrapping the lemon peel tightly around a bar spoon. You get tight curls and an easy garnish action by letting it fall off the end of your spoon :)

I do a blend of both 1/2 oz Bummer and Lazarus Gin (grape based), 1/2 oz Cognac, 1/2 oz lemon juice, 1/2 oz simple syrup, champagne (always champagne). I always pour the champagne first so it incorporates easier.
All the Milk and Honey guys say to serve in a big Coupe glass and use a more full cocktail proportions but I only have flutes at my place

IF you want a REALLY fun French75, use one of those Butterfly Blue Pea Flower gins like "End of Days Luna Blue" or "Conniption." You'll get AMAZING floral notes on the nose, and a beautiful pink-lavender color...

I didn't know that cognac is common to use in F75 but I tried in home versions with gin, bourbon and cognac by my own invention and all of them are super deliscious!

I have to tell you that I all my years as a bartender, even when I worked at the Pierre Hotel in NYC, I never had a customer ask for a 75 to be made with brandy and as you said it was built in a Collins glass.
Its worth noting that the style of garnish in this cocktail will have a lot of nucleation sites to agitate the sparking wine so it will go flat very fast. Loved the video! Cheers!
