So hard to get off. Once I started cooking them this way with a pot I’ll never go back to a pan. There’s less surface area for them to burn onto I find. I don’t use the creme fresh and every bit of my eggs still slide right out, no burnt on layer anymore.
This technique is used on some recipe for bakery. The technique is to not cook the eggs dried or have solid particles but to cook it while maintaining the formation of the overall egg texture. Which is quite hard to do. That's also how carbonara sauce is made. They use egg and cheese only. I always failed making carbonara. The little bunch of particle was formed in my sauce ruining my carbonara. The sauce would then taste like an egg. Overcooking or undercooking increased the smell of stinky egg in my experience. 😢 Good thing I quit culinary art

After a bit of gentle cooking i let the pan cool off Then I added the eggs and finished them off your way. Topped it with some parsley and a bit of cheddar 🤤 (hope that's the right emoji lol) Wish I could upload a pic. Thanks for the great videos.
Yeah the creme fraiche is extra, but it's really nice. It's not like creme fraiche or sour cream is something super fancy that's hard to find. Just about any small grocery store should have both.
I used violife cream cheese and margarine for a dairy-free version and it came out amazing. I think you could also use regular cream cheese since the vegan play dough version works.
Just made these and they were the best I got the consistency right. They were creamy and super fluffy I didn’t have chives and the sourdough we had was thin so next time I’d get some chives and brioche or a thicker sourdough

Bit late with the comment, but ive been making my scrambled eggs slowly for yeas I dont take them on and off the heat I just leave the gas on low also ive tried his method of mixing the eggs in the pan and seaoning after cooking and also mixing the egg in a bowl and seasoning pre cooking and then transfering mixed seasoned eggs to the pan and I dont notice any difference in the final product at the end and to be honest I prefer it without the creme fraiche I find if you cook the eggs slow enough they are creamy any way adding dairy just takes away the flavour of the creamy eggs and I used to always add milk or cream on sour cream etc but yeah plain old eggs salt and pepper, perfect.
Right…he’s a chef…work in very high paced restaurants. Imagine your a chef and you have 5 orders coming on your ticket…need to be out to table in 15-20 min max for high end restaurant service…yet it needs to be 4-5 star meal.
I used a stainless steal bowl to whisk my eggs. One day I washed it first with hot water and forgot to cool it down with cold water. The eggs started cooking in the bowl as I was whisking them. It's crazy how delicate eggs can be and how there's a million ways to cook them.

I agree, you can see at the end when he puts the eggs on the toast they look very wet. I prefer they be cooked just a bit longer myself. It's like people who prefer their hardboiled eggs runny vs those who like a more solid yolk
If you used salted butter, the salt in the butter makes the eggs turn watery. I just heard it in another video. It shouldn't be seasoned with salt until the very end.
I made this for my boyfriend, and he loved it so much that he watched this video to learn how it's done. The only caveat is that I cannot have dairy so I used margarine and violife cream cheese instead.
i've been doing this a few years now and a few tips: make sure your pot is small, if the bottom of it is too big it will cook too much of the egg too fast. i personally don't like making an egg paste so i really don't stir very much, just enough to scrape the bottom and break down the butter. in my experience the sour cream/ creme fraiche doesn't do much, you can just time it, just make sure you leave it ever so slightly undercooked at the end. chives are optional but they really bring out a fresh flavor. butter is the secret ingredient, don't skimp on it. salt at the end makes it delicious.

90 percent of the people who complain about how Ramsay cooks his eggs simply don't cook them right. The point from being watery and under-done and over cooked is literally 30 seconds or a minute. The creme fraiche or sour cream at the end stops the eggs from cooking and going rubbery. It should take you literally 5 minutes to cook them like this. Don't let them get too hot on the bottom of the pan, that's why constantly stirring is needed. The idea is that all the eggs should come to the same thick consistency at the same time, approximately. That's why it is very easy to over cook them... or not cook them enough. You have that narrow 30 second to 1 minute window to get them just right.
@@thomaslewis247 7-8 should be fine. You want a generous heat for the pot. 6 is fine but depending on your stove, it may cause you to leave the pot longer than usual on the stove and accidenlty over cook it

My scrambled eggs come out so creamy. Takes a while to make. Very similar to making risotto. Low heat and don't stop stirring. Just egg, butter and seasoning. Sometimes I stir in some shredded (has to be shredded) cheddar.

I don't know why but adding shredded cheese into the heat melts it completely and it tastes like vomit, always add it after the eggs come out so it still resembles cheese a little bit perhaps. Best to you.
I wouldn't do scrambled eggs with cast iron. It holds the heat too much and the egg will stick unless you have a really, really good coating. Notice in the video that Gordon is whisking to prevent the sticking? But I tried making over easy eggs and it works great in crisping the edges.
Quick question Chef Ramsay - if I'm putting sausage or ham in my eggs, do I heat it up on the side and then add it to the eggs at the end or can I cook it in the eggs as the eggs are cooking? (Pre-cooked sausage / Ham coming from the fridge - we're not a restaurant so we can't just cook fresh every day like that... LOL! But I promise it's stored correctly and eaten within a few days).
The first real secret is to beat them up really good before pouring it into the pan. Second is slowly cook them. Overlooking is just blah. You can season it before the pour, personally I never saw or tasted a difference. Third add some colbyjack cheese. Adds a nice taste to it.

i've been doing this a few years now and a few tips: make sure your pot is small, if the bottom of it is too big it will cook too much of the egg too fast. i personally don't like making an egg paste so i really don't stir very much, just enough to scrape the bottom and break down the butter. in my experience the sour cream/ creme fraiche doesn't do much, you can just time it, just make sure you leave it ever so slightly undercooked at the end. chives are optional but they really bring out a fresh flavor. butter is the secret ingredient, don't skimp on it. salt at the end makes it delicious.
How long do you put it on heat for? 45 seconds? 1 min?
@@VeenaMichelle not very long! I take it off as soon as i see that it's starting to cook and stir for a bit before putting it back on. just make sure it doesn't look too wet when you're done. sorry this is so late, you probably figured it out by now lol

Using a bain marie is the best way to cook eggs, the texture is way smoother and better and they don't overcook like these.

90 percent of the people who complain about how Ramsay cooks his eggs simply don't cook them right. The point from being watery and under-done and over cooked is literally 30 seconds or a minute. The creme fraiche or sour cream at the end stops the eggs from cooking and going rubbery. It should take you literally 5 minutes to cook them like this. Don't let them get too hot on the bottom of the pan, that's why constantly stirring is needed. The idea is that all the eggs should come to the same thick consistency at the same time, approximately. That's why it is very easy to over cook them... or not cook them enough. You have that narrow 30 second to 1 minute window to get them just right.
If you do it right they are so fucking good. Complete breakfast game changer.

@@thomaslewis247 7-8 should be fine. You want a generous heat for the pot. 6 is fine but depending on your stove, it may cause you to leave the pot longer than usual on the stove and accidenlty over cook it

One does not make eggs this way and not impersonate the great Gordon Ramsey whilst doing so. Throw in a “you donut” for full effect when you overcook them.

My scrambled eggs come out so creamy. Takes a while to make. Very similar to making risotto. Low heat and don't stop stirring. Just egg, butter and seasoning. Sometimes I stir in some shredded (has to be shredded) cheddar.

I don't know why but adding shredded cheese into the heat melts it completely and it tastes like vomit, always add it after the eggs come out so it still resembles cheese a little bit perhaps. Best to you.

Can this be done with cast iron pans? Or do the pans retain too much heat?
I wouldn't do scrambled eggs with cast iron. It holds the heat too much and the egg will stick unless you have a really, really good coating. Notice in the video that Gordon is whisking to prevent the sticking? But I tried making over easy eggs and it works great in crisping the edges.
Quick question Chef Ramsay - if I'm putting sausage or ham in my eggs, do I heat it up on the side and then add it to the eggs at the end or can I cook it in the eggs as the eggs are cooking? (Pre-cooked sausage / Ham coming from the fridge - we're not a restaurant so we can't just cook fresh every day like that... LOL! But I promise it's stored correctly and eaten within a few days).
Don't cook it in the eggs as the eggs are cooking. You're going to destroy the eggs.
Seperate then never cook them together
The first real secret is to beat them up really good before pouring it into the pan. Second is slowly cook them. Overlooking is just blah. You can season it before the pour, personally I never saw or tasted a difference. Third add some colbyjack cheese. Adds a nice taste to it.
