Kim. I'm from Louisiana and just a little hint. Make the gumbo the night before let it cool down put it in the refrigerator and let all the flavors melt together and then just heat it up the next day. It will be much better.
Baton Rouge, Louisiana here. 3/4 cup oil,, 2/3 cups flour. Yes ,, love your darker roux. I messed up a few batches,, get your color,, turn down fire,, add your trinity,, ( onions, bell pepper, celery, garlic). This will cool down your roux. Add your HOT, chicken broth slowly, small amounts. Stirring after each,,, once your broth is added kick your heat up ,, add meats ,,, simmer. You did great👍❤️‼️

That gumbo looks so yummy! I don't use green peppers in mine either but do use those little sweet peppers and i take a can of broth out of the pot and start adding to the rue when it's ready a bit at a time actually your mom's way is probably less messy. My son had a Christmas party with his friends and then I had a choir party so, we really went all out in our decorating. My problem is having to carry our totes upstairs to the attic. Your gumbo looked very good, I learned to make a gumbo for my husband who’s Cajun, we do the Trinity, use fresh okra, and fresh tomatoes when we have them, or we will use canned, but not very often. Greenwell Springs, La. here.. oh Lordy you may get some people saying "no Tomatoes in gumbo" but the only thing missing for me would be some smoked sausage...to each their own..lol..my uncle was as Cajun as you could get and he put tomatoes in his seafood gumbo...good job.. oh and why not buy some pillow covers and then all you need to do is change them out for the seasons
My son has eaten gumbo since he was a baby. His grandmother made delicious, seafood gumbo and okra gumbo. She came from southeast Texas. He grew up watching her cook. He, due to allergies, can't have the Rue, but he has found a way around it, and it is darn near as good as his grandmothers gumbo. I enjoy following you, I bet your gumbo is delicious. I have found that everyone has their own way of making it.😊

I need to place me a grocery order to get some okra and tomatoes in the can. We've had two weeks of 20° weather along with 6 in of snow. I'm ready for some warmer weather now. Louisiana Cajun here. Never heard of adding sugar. I use all fresh ingredients & I don't put tomatoes unless I make an okra & shrimp gumbo. I like my gumbo thick almost like a stew, but not & I usually cool it down & refrigerate for the next day, the flavors all meld together just taste even better. I always have some made in my freezer. Where's the cornbread? 😢
That looks so good Kim!! I’ve never cooked roux that long and that color before. When I make gravy I slightly burn my roux. You can smell when it gets to that right flavor. But I’ve always cooked mine on medium high like an 8. I’m assuming you cook yours on a lower temp??? I’ve seen they have jars of gumbo roux but my grocery store never has it. I just use a seasoning pack lol I love the green peppers and onions. I add celery but could totally leave that out.

Well I made it easy using frozen meatballs. My family went back for seconds. Really good over rice or mashed potatoes.

Kim, Do you use Filé powder in your gumbo?
Is that roux just oil and flour? Why is it so dark? I usually use butter and flour for a roux which makes a light colored roux.
