I would enjoy Also sprach Zarathustra by Richard Strauss. 30 minutes of a beautiful and very challenging bit of teamwork between a pipe organ and a full orchestra. To make things even more difficult, there aren’t a lot of pipe organs (or venues) that are capable of truly reproducing the range and power that the 9 chapters of this tone poem demands. It gives me chills just thinking about the beginning of chapter one with the organ playing the bone rattling deep C. The intenseness of 16.7Hz. streaming from a pipe that is taller than the 3 story house I grew up in, surrounding and penetrating every cubic centimeter of everything, and the note isn’t even being played at full power. THAT comes later!
Fun Fact: the Cathedral collected pice or set bit by bit and one day they realized that they had the largest organ. It was not planed to be the bigest and it still continues to grow bit by bit.
In a pipe organ each manual and the pedalboatd has its own sound. That way the organ can switch between sounds with the movement of the organists hand. It is very complicated and all the switches control which manual plays which pipes. But you know that. You said manual not keyboard.
All these keyboards are so that you can change quickly to different pipe configurations. Each manual can be pre-programmed to play what ever pipes you like. Just hit the pre-select button, and presto!

Each manuel playes mostly one group of pipes. That is why the larger the organ the more manuels are needed. Each manual is assigned the desired set of pipes, one note, or sometimes chord, per key using buttons called stops. The presets allow rapid switching between setups. For example one preset could be manual one 4', 8' and 16' reeds in the great section, manual 2 8' flute in the swell and the pedalbboard 32' horn. Another preset could be manual 1 8' trumpet, manual 2 4' basoon and pedalbboard play the carillon. Drastically different sounds quickly switched between. The more modern the design of the linkage between the keys/pedals and the pipes the more possibilities. A major reason for multiple manuals is the ability to play more than one part at once like a one person symphony. Note to organists: my terminology is not completely correct and my choice of presets could sound really bad. Please correct me where needed.
I played the Organ at a church once, I giggled the entire time because holy crap the power I felt as a musician there. As far as I know I was the last person to play that magical beast by hand as the churchnorganist passed and they've been using the MIDI function since.
The organ is a large and complicated musical instrument. It is really scary to see the rows of keys in front of you and the many pedals under your feet! However, the momentum of the movement it sends out is really admirable.

It doesn't matter how hard you hit the keys on the organ the sound is the same. To increase or soften the volume you use sounding pedals near the foot pedals.These pedal s often one but can 3 or 4alter the volume of the sound produced
