Tortang talong is one of my favorites! I always put the talong into a pan without oil, high heat... then flip around when burnt... after all sides are black... then take out cool off... then I peel them and so on... 😊😊 try it! In Germany I put it on the ceran stove hahaha without pan, because my mother in law told me she does it like that haha Other method is to cook in water, but I like the pan Version better. Tastes better and easier to peel.

You can use a tong and/or skewer a barbeque stick on one end of the egg plant to serve as a handle. When the skin is thoroughly burned, enclosed the grilled eggplant in a plastic for at least 10 minutes. The eggplant is going to become moist inside the bag. After that take it out and you can easily peel the skin under slow running faucet water (to clean it well too). You didn't burn or grill the eggplant enough, the skin didn't come off easily. Don't be afraid to burn the skin till very very black, it's not going to burn the inside. Please try again next time. An alternative is use a peeler to remove the skin. Wrap the peeled eggplant in aluminum foil and grill it on slow top oven fire until it's done/soft to be mashed.
