Keto Zucchini Bread using Almond Flour

- This low carb and keto zucchini bread is made with almond flour and is perfectly moist. Walnuts, blueberries or chocolate chips can be added for extra flavor and crunch. I also give instructions for freezing.

Ingredients
2 Cups Almond Flour
1/2 teaspoon Kosher salt
1/2 teaspoon Ground Cinnamon
1/2 Cup Swerve Sweetener
1 teaspoon Baking soda
2 Large Eggs, Beaten
1/4 Cup Melted butter
1 1/2 Cups Grated Zucchini with peel
Instructions
Preheat oven to 350F. Grease an 8x4 loaf pan with butter or cooking spray.
In a large bowl, combine the almond flour, salt, cinnamon, swerve, and baking soda.
Wrap the grated zucchini in a kitchen towel and squeeze out as much liquid as you can. Discard liquid and add zucchini to the dry ingredients followed by the eggs and melted butter. Stir batter until combined. See notes for instructions on adding walnuts, chocolate chips, or blueberries.
Pour batter into greased loaf pan and bake in the 350F oven for 60 minutes or until a toothpick comes out clean. Let cool before serving. See notes for freezing.
Notes
Adding walnuts, blueberries, or chocolate chips: If you want to add some extra sweetness, you can add sugar free chocolate chips or blueberries. Of course, this would alter the nutrition information so please be aware of that.
To add walnuts or chocolate chips, measure out 1/2 cup and fold them in to the batter right before baking.

Freezing Instructions: To freeze this zucchini bread whole, let it cool completely and then wrap in plastic wrap, followed by foil. Place in the freezer and keep frozen up to 4 months. When ready to eat, remove from the freezer and let thaw on the counter. It should thaw pretty fast.
To freeze this healthy zucchini bread in individual slices, let cool completely and refrigerate overnight. Slice into individual slices and wrap each one in plastic wrap. Place wrapped slices in a freezer bag or freezer safe container and freeze for up to 4 months. When ready to eat, remove as many slices as you like and let thaw on the counter.

It’s delicious I added 1/4 cup of sour cream to moist the bread and 1/4 coconut flour so delicious this is my favorite one for my morning coffee
I always add sour cream to my banana bread, but wasn’t sure if it would come out right using the almond flour. I will definitely use sour cream now.

I have never used coconut flour as this is all new to me and I keep seeing coconut flour in some ingredients. Does the coconut flour change the taste? For instance, should I expect a tropical flare? 😂

It's really nice to see realistic serving size for this size loaf pan, 8 is reasonable, 16 is not. I am always so tired of recipes that claim only 1 net carb, then when you see the serving size it is no wonder! Thank you for your time showing us the wonderful yummy recipe. Add 1/4 cup sour cream, some people add 1/4 cup coconut flour with sour cream.
Same here! My batter is so crumbly I had to add some soymilk to bind it so it's not all dry. Bread turned out dry and powdery like I imagine it would. There no way two eggs and 1/4c butter is all the liquid you need for this batter.
I only had one zucchini so I cut the recipe by half and it turned out amazing. Very moist and delicious! Thanks so much and definitely keep the great Keto recipes coming.

I am going to try this because I love zucchini bread but full disclosure, watching you make this and seeing the batter in the pan and the final product put me off a bit because the bread you sampled looked very gummy. I also had to chuckle a bit when you said to use a toothpick - but the batter was so dry the toothpick looks like it would have come out clean putting it in the oven,... lol, just kidding. I really do appreciate you sharing your hard work and great recipe. Nicely done!

I found tha freezing grated zucchini in a quart container separates the water. It takes more zucchini to make a recipe after thawing and squeezing out he zukes. But works magnificently

I have never used rice flour so I’m not sure
Use coconut flour just look for the ratio. Coconut flour is always less than almond.
Rice flour is not low carb

Looks great! Can you clarify the serving size and macros? The text below the video says 8 slices. The printable recipe webpage says 12. The calories, carbs, etc. and different too, but oddly higher for the smaller portion size. Thanks!

Baking soda needs an acid to react with it so it works properly something like lemon, sour cream , yogurt etc. all have acid, I am going to try 1/4 sour cream with this bread

Yes, as long as it is a 1 for 1 substitute for sugar

Mine was burnt after 60 mins!
My oven would of baked it in 20 mins. Every oven is different, you just need to get to know yours. Then you adjust recipe bake times from there.
Mine was perfect at 60 minutes.
Save the Zucchini and other veg liquids in your freezer for veg broth? Seems to me that would work.
I hate that fake sugar taste. I think I would try allulose instead, which would would make it soft and flexible, which maybe swerve does as well, I don't know, and doesn't have that fake sugar taste.
