Making a potato, leek and cheese pie - classic vegetarian pot pies

When Pranesh lived in the UK one of his favourite shops was the West Cornwall Pasty Company and one of their vegetarian pies is the classic potato, leek and cheese pie. We had some extra leeks left over from the salmon soup ( • Making creamy salmon s... ) so we decided to use them up in this simple but delicious pie!
Ingredients
3 med potatoes, cubed small
1 small onion, diced fine
6 small leeks, sliced
handful frozen peas
salt and pepper to season
120g butter (salted)
3 cloves garlic, crushed
2 tbs flour
1 & 1/2 cup milk
1 cup grated cheese
Puff pastry
a few sprigs fresh thyme
Serve after allowing to cool for 5 to 10 minutes to avoid being burnt

Lazy tip: fill the baking tray or dish with filling, then simply roll out the pastry and layer over the tray
