      Hi Renu,
      I'm learning to cook more Indian food - LOVE it. So many great flavors. And yes, so many onions!
      I like the convenience of chopping a bunch ahead of time rather than chopping them every day.
      Thanks for watching and commenting.

    Great tip! I use onions in something just about every week. Prepping a bunch ahead of time and freezing them will be a big time saver. It might also save me a bit of money since I will be able to buy the larger onion bags now that I don't need to worry about sprouting.

    • @GettyStewart

      Thanks jb05. I agree, it does help save a bit of time and money. Just prepping enough onions to prevent sprouting or spoilage and giving you three to four weeks of prepped onions. Perfect.

    I've done the same thing and it's great, only after dicing, I measure 1/2 cup and put it in a ZipLoc SNACK bag. That way I have several pre=measure bags of onion. When the recipe calls for one onion or I cup of onions, I add 2 bags of pre-measured onions and I'm all set!

      I put them in a large baggie.
      Then using a ruler, I divide the bag into portions by putting a lined dent into the bag.
      With the bag portioned off by dents, I have me pre-measured onions and only used one bag.

    I see that some wonder about why to freeze them rather than just cutting as needed. Here in the southern US, Georgia specifically, we grow delicious Vidalia sweet onions that have a limited shelf life. This is a great way to have them on hand for a longer time if they are about to go bad otherwise.

    Can you blanch them to make them last longer ?

    • @GettyStewart
      @GettyStewart  4 роки тому +1

      The National Center for Home Food Preservation says blanching is not required for diced onions. I think there’s a trade off - when you blanch diced onions you lose a bit of their original bite, but that may be less flavor loss than the change in flavor from keeping raw diced onions in the freezer for more than 3 months. Maybe do an experiment and let us know which you prefer at 1,3,6,9 months.

    I have discovered a way to freeze some items. Bananas, I cut them in pieces that I like, I place on an open plate, stick in freezer, uncovered for 24 hours. Then later, transfer to ziplock bag. Perfect. Not limp nor brown. I think that I will find that if I will freeze the onions the same way, place on open plate, leave inside freezer for 24 hours, then transfer to ziplock bag after they have frozen, they don't turn as limp. Thanks. PS I do same for fresh kale and fresh collard greens. They crisp while freezing.

    • @GettyStewart
      @GettyStewart  8 років тому +2

      +nemoryer Good tip. Laying things out so they freeze individually is a good idea. The only concern with onions might be that the smell of fresh cut onions might overwhelm the freezer. Of course if you have a nice cold winter like we do here in the Canadian prairies - you could stick a tray of onions outside for 30 minutes and be done - no odor issue!

    • @Jennifr1966

    suggestion: after putting onions in bag, lay bag on table and flatten the contents for space and storage efficiency and also to expel as much air as possible.( place on cookie tray for freezing time) (close the bag almost completely, then insert straw and suck a bit more air out.)

    • @GettyStewart
      @GettyStewart  3 роки тому

      It’s tricky! Use the pulse setting and watch carefully to avoid chopping them too fine or turning into purée. Also, when I freeze them, I spread the bag so it makes a thin layer so it’s way to break off a chunk when I need them. The bags won’t be as full, but it’s so much easier later it’s worth a couple more bags.

    • @GettyStewart
      @GettyStewart  6 років тому +1

      Hi Ron, That must be very frustrating. I have not had this issue when I freeze onions. It may have to do with onion variety or age of onion. I also use heavy duty freezer bags. I'm surprised that even with double bagging you're still getting odor. You'll want to create an airtight barrier to avoid any odor moving through the bags, perhaps wrapping the first bag in aluminum foil then putting in the second bag?
      If all else fails and you simply can't stand it, you could cook them all at once and then freeze them in convenient sizes that you could just toss into recipes.
      Sorry, I know the whole point was to make things easier and more convenient - triple wrapping or having to cook them after a first attempt certainly isn't convenient! Good luck.

    Not criticising your video, just putting forward my points. okay?
    Onions arent that expensive and plus they last for a year in a dry, cool, dark place. Cant see a reason to do this as it only fills up the freezer, only if you cook a lot with onions and it does save time. Plus, sometimes the smell goes through the bags and stink out your whole freezer. Might have to Blanch the Onions first. Onions give you tears because you bruise them while cutting them, when you knife is too blunt. Plus you never said how long they keep in the freezer.
    Excellent idea if you cook a lot and need to save time in chopping / dicing onions or if onions are expensive where you live or hard to get. Your video is really good because you go straight to the point. keep up the great work.

    • @GettyStewart

      Thank you for your thoughtful reply, Mav, you bring up some good points. On my website I go into more details about why I do this, how to freeze them and for how long (no more than 3 months). www.gettystewart.com/why-freezing-onions-is-a-good-idea/ As for the tears, it's the sulfur compounds in the onions that are released when you cut through the core of the onion, whether your knife is sharp or dull. I wrote an article about reducing tears when cutting onions, read more here www.gettystewart.com/14-tips-to-reduce-tears-and-remove-smells-when-cutting-onions/

      We've been doing this for a couple of years now....originally we are a Indian so onions we get through like anything! At first when Mum started doing this I was sceptical as we have always coked from fresh - but if you do it like this video shows it is still fresh and not watery.....we do this with ginger....shredded, diced and julienne. We have chopping days to fill up stock.
      Btw to avoid watery eyes avoid chopping of the furry bit as that has the most potency of vapours :)

    yeah but when the onions defrost all the water gushes out of them and they become mushy and odd.. and even worse when done in the food processor.. I can verify that GARLIC works very good using this method, but after you put it in a an ice cube tray, and then pour in olive oil to each ice cube to seal the flavor, then freeze for garlic ice cubes that maintain the real flavor.

    • @GettyStewart
      @GettyStewart  4 роки тому

      Try using the slicing blade on the processor so you get bigger slices instead of small, diced onions. I've never found them to be too mushy. And remember you're most likely using them in soups, stews, etc. so not really an issue.

  • @mschicabee
    @mschicabee 5 років тому +1

    A couple of things you might consider. No need to refrigerate, just chop off the root end first and peel to top then chop off the tops, no tears. I assume you do know that leaving air in the bag with food is not a great idea. Using as small a knife as possible is best for safety, and makes the job much faster and easier. When you label a bag you should do it before the bag is handled with hands that have touched the food or are damp.

      Good question, I've not heard of using onion juice for hair. However, if you puree your onions in a food processor, you can certainly get a lot of onion "juice". I would freeze it in a double lined container for only a month and make a fresh batch every month for optimum quality.

      You're right, nemoryer, frozen onions, just like all veggies, lose their crispness when frozen. Not great for fresh salads but great for any cooked dishes. And no need for a food processor, use whatever method you usually use for chopping onions - just chop a few extra, toss 'em in a freezer bag to reduce the number of times you have to start from scratch.

    Some studies mentioned peeling and storing onions in fridge may not be a great idea as peeled or chopped onions can be easily contaminated by bacteria and pathogens present in the environment, which leads to oxidation of onions and this may lead to breeding of pathogens and do more harm than good..especially when its not vacumm seal in a way.
