- Hi everyone! Here is the pastelle recipe that most of you saw on snapchat and wanted the recipe! Sorry it's so long. Pastelle is found on every Trini Christmas table. Here is my take on it. The ingredients you'll need are:
A few fig or banana leaves
2 lbs of minced chicken
1 tbsps coconut oil or canola oil
2 heads of garlic or 20 cloves, minced
10-15 pimentos, chopped
1/4 cup of chopped chive or scallion
a few sprigs of thyme
1/4 cup chopped bandhania, culantro or shadon beni
1 onion, chopped finely
1/2 cup celery, chopped
1/4 cup of parsley, chopped
1/3 cup ketchup
a few dashes of Worcestershire sauce
2-3 hot peppers, chopped - depending on your preference
salt
black pepper
For the cornMEAL dough (usually Promasa CornFLOUR is used)
-2 cups of cornmeal
-3 cups of hot water
-5 tbsps butter
-2 tsps salt

This woman is one the best trini cooks on UA-cam...She is better than natasha by a mile..and she is very good at explaining everything step by step
Christmas is in less than 3 weeks....and I am back to this lovely recipe for my pastelles:) Although I marinate the minced meat a night before making them and add capers and olives.....this recipe is also wonderful. Happy times!!!
in Puerto Rico we also have pasteles but the dough is made out of green bananas, pumpkin and malanga(different name) but its raw and we boil it . delicious! i love trini food since i grew up in the virgin islands you find roti shack with delicious food. i also visited trinidad years ago. love the culture & we share similarities in cuisine.

very nice I wash, and freeze my leaves and thaw a bit there's no need to run it over the fire. Believe it or not it folds nicely I cater these for the season so I have to freeze it but yours looks so delicious keep em Coming.
The Masa Repa you used is actually the brand name of the corn flour and is exactly the same consistency as the Promasa which is also a brand name as well as PAN or Dona Repa and any of these can be used for pastelles. They are all processed by precooking which is different from the regular cornmeal you use for coo-coo or cornbread.
i add raisens, optional olives and capers, sometimes original for pastelles
This looks delish, like that you sautéed the seasonings first.

put the oiled leaf on foil and fold easily and to get it round without a press use a pie dish, oil bottom and press on d leaf and its like a perfect press

I used a small cast iron skillet and it's really heavy I press on it and bingo my husband says I'm a crazy old woman

I really like using parchment paper for this too... And it's easy to transfer to foil when I want to wrap it

Just how I make my own son doesn’t like olives, capers and raisins. I also steam didn’t even know some persons boil them. Great video also endorse the comment about using the plate to flatten the corn I do that for empanadas.

Hi Resh love this rescipe of the pastille....i really do make my pastille like that but i put the rasins an olives....dont really likes the capers.....lots of work but not able to make this year because of the condition i an in...hmmm still cant believe what happen to me. 😋😋
For us Americans, attempting to cook this awesome stuff, specifically which type of peppers are considered pimento? In my store I only see bell pepper and cubanelle offered, other than the hot types like bonnet, habanero or jalapeno

When you said the part about raisins and capers being omitted, I knew that this was the recipe for me. Btw do you have a recipe for flour pastelles? As in all purpose flour, not corn flour

looks delicious can I used something else in place of the banana leaf. I also live in NY but not in queens am living in Schenectady Ny that's 3hrs away from queens.. and we don't have alot of Indian store here

Do you wash mince chicken? I like washing my meat,but I never really use the mince chicken,I use the boneless chicken

I have a up coming party, I was wondering when wrapping the pastel in the banana leaves would it be okay to wrap it again with saran wrap then foil for steaming I have a great problem cooking with foil.
Well when the heat gets in contact with saran wrap it's going to melt, so I would suggest using a bigger piece of banana leaf and wrap it completely so that nothing gets into the pastelle

@@TasteofTrini ummm.... No. Research things before you confirm it's authenticity. The word originated from a place in England and it was where the product was invented. In no way it is pronounced like the way you say it.😒
At 5:19 she did say that she's not good at saying that word. Give her a break. She invested her time to making a FREE tutorial on making her pastels. Also, most of the world jokes about the pronunciation of that word anyway... we all say it how we could :)
