    For fajita casserole a friend of mine used brisket that he de-silvered and marinated with the fajita seasoning and 2 ripe kiwis overnight in the refrigerator before making up the casserole. No freeze dryer back then but it was great as the brisket shredded up nicely in it. It also made a lot of it using a full brisket. He mainly made it for family get togethers or any big group gathering that involved bringing a dish. He used the large restaurant stainless steel warmer table things. He would make 2 of those using a 14 to 16 pound beef brisket. 2 of those trays is what he would bring to singles church social dinner and dance. Everyone loved it. His had zucchini, mushrooms, onions and bellpeppers.

    You have such great recipes! When I used to make fajitas I used flank steak back when it was a cheap cut of meat. I think I might make this with chicken. Thanks for your great inspiration 😊

    It occurred to me that you can cook almost any tough meat in the Instant Pot and it will be tender. I think I would cook my meat separately in the IP and then proceed with the other ingredients as you did. Maybe even cook the meat with the salsa and seasoning with some broth in the Instant Pot.

    This is the first video of yours I've watched (but it won't be my last). I'm looking to start medium to long term food storage and was wondering with freeze drying, O2 absorber and mylar bags what the shelf life of this would be? Thanks, Lj

      I really don't like to give storage times, there are so many variables and much I can't control.. However, if prepared properly without fat and oil and stored in optimal conditions I would hope to get 10 or more years. That is only a guess though and is only my opinion.

    That looks really good, BUT in the land of Mexican cuisine (Texas) fajitas are made with skirt steak 😄

      Lol I agree but in lhe land of freeze drying skirt has too much fat 😅
