      I grind one or two tablespoons of chia seeds in my coffee grinder. POW…..instant thickener! No waiting for them to plump up.

    I would recommend blending up the Chia Seeds so you don't have a Grainy Texture! I do that when I make Chia Jam and it's so much better with having blended the chia first.

    Also if you are gluten free, altering a garbanzo bean flourless cookie dough will work for a crust, pre bake it

    I made this today, added a heaping teaspoon of dark chocolate powder and a capful of vanilla extract. Baked it in an 8” cast iron skillet, turned out awesome! It tastes sooo good!😋

    A few notes. Perhaps two cans of chickpeas for volume. If adding liquid, try coconut milk or date syrup. Dates for sweetening would complement your flavors. If adding granulated sweetener, mixing the spices into that first will help you incorporate them more easily. Adding shredded coconut OR pecans would add dimension. A small amount of coconut flour could thicken it if needed.

    You can fix your oven with an eraser for pencils. Gotta unplug the plug out of the back for that display screen and buttons and clean it with an eraser, there's likely build-up crud on there if buttons aren't working

    Hey you should definitely try the "pies" from Argentina - they're savory, but ligther, and can be done vegan as well. They are called "tartas" (tarta de verdura, for example), and are filled with pretty much anything you can think of. It's a pretty healthy food here and a great way of adding more veggies into our diets (even for non-vegan people). It's like a big empanada :)

      Tho I've seen ppl make "pot pies" with just a top layer of dough. And I'm like "you forgot to add a doughy bottom."

    Loving the process! Plus I betcha lunch this would be great as individual pumpkin pie bites, in regular muffin tins with a circle of pie crust as the base. You would have more heat surrounding each serving which would help it firm up more.

      @@TaraSt.Michel Bananas have a particularly distinct flavour (learned this the hard way) but I can imagine a half banana with all the spices, might mostly disappear and work out quite nicely here.

    I’ve been using ground chia seeds. Just zap them in a coffee grinder….they’re an instant thickener. No waiting for them to swell up. Brilliant!

    ok, i made this yesterday and just ate some for breakfast pretty darn good!
    i played a bit fast and loose with the measurements - about a "can" worth of roasted pumpkin, a jar of chickpeas and the aquafaba, approx 2 tbs corn starch, sugar, vanilla, pumpkin pie spice, salt. it cooked well and firmed up as it should.
    there is a very subtle chickpea taste, but maybe only because i know it is full of chickpeas.
    will make again, it was SO easy (ok, ii used store bought pastry, lol)

    I would definitely blend the filling smooth (especially because of the addition of chia seeds!) but I'd say a pretty good first try! :D

    Xanthan gum like a tsp and or corn starch slurry made from the Aquafaba would probably correct the texture

    Whhhhat, no nutmeg?!
    My fav thickener for P.pie is locust bean gum. A little carrageenan gives it bounce that cuts cleanly.
    Oh, and I peel chickpeas for anything needing to be smooth.

    I made vegan pumpkin pie in 2002, without aqua faba. Can’t quite recall outside maybe using a flax seed emulsion, some cornstarch to thicken, and likely old school unsweetened soy milk, along with maple syrup.

    Would it work to use 1.5 cans of chickpeas to firm it up more & fill up the pie plate a bit more? Either way, I definitely want to try this pie! And I love the way you made the crust so easy! I never make traditional pie crusts cuz I find them so hard to make!

    I have a Samsung stove as well. If you reset your breaker for that outlet your numbers may start working again. BTW, loved the chickpea cheesecake.😊

      Flax would also be great!! I had really great improvement blending this together smooth using 2 oz less water. Seemed to be the trick

    Yovana Mendoza who has a UA-cam channel used to be vegan years ago. She was great and very creative with her vegan recipes. Unfortunately she is no longer vegan but you can still find her old videos. She has an awesome pumpkin pie recipe! That is my go to every year! Her channel was called "Rawvana".

    I’m going to be honest. I used to watch your videos a lot before, i had some what of a break from UA-cam for a bit and it’s been a year or two i think where i stopped watching anything i used to watch.
    On my tv my mothers account recommended this video so i said I’ll watch it. I watched the ENTIRE video and when you said vegan butter i was like ‘oh! He is using vegan stuff, he must be making this for a vegan audience’. I watched till the end, it was only when your wife came around i was like 😮…

    Thanks for this, and to everyone else who offered ideas for vegetarian pumpkin pie. I've been trying to figure out how to substitute for the eggs and butter in traditional pumpkin pie recipes since last year, due to all the butternut squash I grew. I've had mixed results using cornstarch for the binder, so I might try beans and aquafava this time.

    Looks like a great receipe, but the coconut oils is a non-starter for me. I want to reduce my oils or eliminate them. While it is healthier than condensed milk and eggs, it's not that much healthier.

      not sure what you mean but I absolutely havnt "picked up more weight". Im working out more so maybe I have more muscle definition but ive also lost more fat.

      Because we choose to treat our bodies with respect by choosing food that supports good health and still tastes amazing. Why would we want to use artery-clogging ingredients when we can use much healthier foods? Healthfulness is as important as taste when choosing what to eat. You really are what you eat. The standard American diet is based solely on taste and convenience and leads to obesity, diabetes, hypertension, heart disease, etc. It’s not just about living longer, but feeling better and living healthier, with less pain, disease, drugs, and surgery. Also, some people have allergies or food sensitivities to eggs and/or milk. Personally, I am also an animal lover and an environmentalist. A plant-based diet is much better for us, the animals, and the planet - a win-win-win! There really is no down-side to going plant-based, except for dealing with people who take offense for some reason. Time and again people who have gone plant-based have said that their only regret is not doing it sooner, including me.

      @RundellMR My problem is that people like you are obsessed with this issue and try to tell others that they're eating poison. Yes, people have said that to me! I eat a healthy diet, including eggs and dairy and all the other things that some people are now saying are unhealthy. And I eat traditional pumpkin pie made with eggs and milk, with a crust that is wheat flour and butter. If someone has allergies or sensitivities, it's understandable to substitute, but declaring that good foods are unhealthy is overdoing it. I don't eat pumpkin pie every day! Maybe once a year. It's not killing me.
      By the way, my mother-in-law ate white bread, margarine, eggs, wheat, sugar in everything, and meat. Apparently such an unhealthy diet shortened her life. She was only 98 when she died, mentally sharp and healthy until then.
      I don't eat like she did, but I'm not going to live my life preoccupied with eliminating good wholesome foods that some people say are unhealthy. There's no proof that it will make you live longer.

      Good for your mother in law.. some people have great genetics... there are people that live to 100 that smoked cigarettes their entire life, but that doesn't make smoking healthy.
      Youre asking what is wrong with me for making this recipe...
      I'm lactose intolerant so dairy makes me feel like crap.
      Even though my diet is 99.9% plant based I still have genetic high cholesterol so eggs are a no no.
      This is a healthier version of pumpkin pie with more dietary fiber, and less fat/ saturated fat. It comes out to be lower calories as well.
      So get off your high horse and calm down. If you want to eat your pumpkin pie the way you want it WHO CARES?? I dont. Eat that. Thats up to you, but there is also nothing wrong with me making a cleaner, healthier, pumpkin pie and yes that is exactly what this is like it or not.

      Yes I'm very serious and pumpkin pie is one of my favorite deserts! The texture of this one was a little off, I fixed it on the next test simply blending everything into a smooth custard.
      But taste ,smell... no difference.
