I would recommend blending up the Chia Seeds so you don't have a Grainy Texture! I do that when I make Chia Jam and it's so much better with having blended the chia first.
I made this today, added a heaping teaspoon of dark chocolate powder and a capful of vanilla extract. Baked it in an 8” cast iron skillet, turned out awesome! It tastes sooo good!😋
A few notes. Perhaps two cans of chickpeas for volume. If adding liquid, try coconut milk or date syrup. Dates for sweetening would complement your flavors. If adding granulated sweetener, mixing the spices into that first will help you incorporate them more easily. Adding shredded coconut OR pecans would add dimension. A small amount of coconut flour could thicken it if needed.
You can fix your oven with an eraser for pencils. Gotta unplug the plug out of the back for that display screen and buttons and clean it with an eraser, there's likely build-up crud on there if buttons aren't working
Hey you should definitely try the "pies" from Argentina - they're savory, but ligther, and can be done vegan as well. They are called "tartas" (tarta de verdura, for example), and are filled with pretty much anything you can think of. It's a pretty healthy food here and a great way of adding more veggies into our diets (even for non-vegan people). It's like a big empanada :)

ok, i made this yesterday and just ate some for breakfast pretty darn good! i played a bit fast and loose with the measurements - about a "can" worth of roasted pumpkin, a jar of chickpeas and the aquafaba, approx 2 tbs corn starch, sugar, vanilla, pumpkin pie spice, salt. it cooked well and firmed up as it should. there is a very subtle chickpea taste, but maybe only because i know it is full of chickpeas. will make again, it was SO easy (ok, ii used store bought pastry, lol)
Whhhhat, no nutmeg?! My fav thickener for P.pie is locust bean gum. A little carrageenan gives it bounce that cuts cleanly. Oh, and I peel chickpeas for anything needing to be smooth.

Why would we want to use artery-clogging ingredients when we can use much healthier foods? Healthfulness is as important as taste when choosing what to eat. You really are what you eat. The standard American diet is based solely on taste and convenience and leads to obesity, diabetes, hypertension, heart disease, etc. It’s not just about living longer, but feeling better and living healthier, with less pain, disease, drugs, and surgery. Also, some people have allergies or food sensitivities to eggs and/or milk. Personally, I am also an animal lover and an environmentalist. A plant-based diet is much better for us, the animals, and the planet - a win-win-win! There really is no down-side to going plant-based, except for dealing with people who take offense for some reason. Time and again people who have gone plant-based have said that their only regret is not doing it sooner, including me.

If someone has allergies or sensitivities, it's understandable to substitute, but declaring that good foods are unhealthy is overdoing it. I don't eat pumpkin pie every day! Maybe once a year. It's not killing me. By the way, my mother-in-law ate white bread, margarine, eggs, wheat, sugar in everything, and meat. Apparently such an unhealthy diet shortened her life. She was only 98 when she died, mentally sharp and healthy until then. I don't eat like she did, but I'm not going to live my life preoccupied with eliminating good wholesome foods that some people say are unhealthy. There's no proof that it will make you live longer.

Youre asking what is wrong with me for making this recipe... I'm lactose intolerant so dairy makes me feel like crap. Even though my diet is 99.9% plant based I still have genetic high cholesterol so eggs are a no no. This is a healthier version of pumpkin pie with more dietary fiber, and less fat/ saturated fat. It comes out to be lower calories as well. So get off your high horse and calm down. If you want to eat your pumpkin pie the way you want it WHO CARES?? I dont. Eat that. Thats up to you, but there is also nothing wrong with me making a cleaner, healthier, pumpkin pie and yes that is exactly what this is like it or not.

Yes I'm very serious and pumpkin pie is one of my favorite deserts! The texture of this one was a little off, I fixed it on the next test simply blending everything into a smooth custard. But taste ,smell... no difference.

Great ideas - plus a teaspoon or two of vanilla extract will also bring out the spices nicely!

I’ve been using ground chia seeds. Just zap them in a coffee grinder….they’re an instant thickener. No waiting for them to swell up. Brilliant!

I would definitely blend the filling smooth (especially because of the addition of chia seeds!) but I'd say a pretty good first try! :D
Xanthan gum like a tsp and or corn starch slurry made from the Aquafaba would probably correct the texture
