    I’ve been using a Smokey mountain for 10 years and have never wrapped a butt . That’s the idea of the water pan . It keeps the butt moist. Cooking at a lower temperature also helps to keep the meat moist. The only thing I agree with is the BBQ guru control.

    Really liking the WSM videos JP!
    I just picked up a used WSM 18 for less than a $100 in perfect shape, I’m going to get a few cooks on it then start modding it.

      I just got one for 75 in really good shape. I will add the gasket kit but I'm not going crazy like 500 for a temp controller that's just off the hook if I want something that precise ill cook in my oven lol

    The Smokey mountain is something I really want to step up to. Right now I’m just on a Weber kettle.

      CrabberPA I have only seen a few used WSM on Craigslist this year. There are usually a few of each other type of grill posted up. Really says something about how good this particular smoker/grill is.

    There you go JP, thats the best pork shoulder i've seen you do yet! You're gonna have fun thinking of different cook selections from the different grate placing and space.Great song you brought in around halfways there,one thing is the quality of the product cooked,another is the presentation of the information,your videos are never over the top nor staid and too slow,too much of that backyard lounging feel.This way it is still helping new learners for example.Hope you have been well.

      18 or 22”? And what are the arguments or drawbacks for either? I want to add a WSM to my arsenal and based on everything I’ve cooked, bigger is better. But it seems like the pros usually pick the 18”. I have a 22” kettle and regularly run out of room on the grate.

      I have the 18”, and it can cook a lot of food, but if I could go back and give myself some advice, it would be to get the 22”. I can cook a huge pork butt on mine, and a huge turkey, but I would totally dig the extra space for full rack ribs. I do cook ribs on my WSM, but I have to cut them in half, or fold them in some way. But that is me, and you might be different. I think the 18” is awesome, and I use it constantly, but there a few times here and there that I wish I had the 22”.

    I just bought a charcoal basket from arbor fab. I can’t wait to use it this summer. Does yours fit perfectly onto the bolts in the bottom of the smoker? I had to rotate mine a little to try and find the right way to situate it. Thanks!

    I love what you've done to your WSM. I wish I could make all the modifications you made however, I'm not as talented tools as you are plus I have mobility issues which will get in the way for sure. I love your web sight and your enthusiasm is delightful to see. Keep Doing What Your Doing.

      Yes I did. Very good basket made from stainless steel. If you buy from them use jpbbq for a discount.

      Hey there Horace, appreciate you asking that question. For the most part on my WSM, I rarely use the water pan. I have a heat deflector in place of the water pan. Works great. Thanks again.

    I couldn't tell if you put the water pan in. In case you use the water pan, do you add boiling water or just right out of the tap?

      I wrap my water pan in foil to keep it clean and add a gallon of boiling water. It helps the WSM come up to temp faster.

      Yes, it is a stainless steel basket I believe. Works great. The guru also works great too. If you drill a hole instead of using the existing vent. You may want to go a little higher at least above the bottom of where the basket lays.
