Hi Andy, great video! I built a similar smoker a while back. It might be a good idea to built an external firebox and connect it with a clay/stone pipe. That way you have more control over your fire. A bonus is that you can put a kettle on your firebox whilst you are waiting on your food. Happy cooking! 🔥
Maybe add a small door in the door for spraying the meat and adding water without losing a lot of heat from opening the full door. Looks great though, love it!

Very nice! I’ve just made a tandoor oven / bbq / smoker from two old oil drums and an old inverted firebowl for the lid. Vermiculite in the gap between the drums and a bit of stove pipe at the bottom to create the rocket draught. Never done smoking before so your video is instructive! Didn’t realise you need a water bowl in there to keep things moist. Every day is a school day!
Nice video! Andy, I know I'm a little late to the game here but if you ever build a smoker again, I'd suggest doing a hot burn with no food to cure the clay and to sterilize the manure. once the clay is hardened its game on.
great smoker , you need to put a piece of glass in your door or side wall when you clay it up so you can see inside , maybe big enough to shine in a torch .
Andy once you get a feel for your temperature control, you can try cold smoking cheese. I've done that several times and it's absolutely phenomenal. I've also done macaroni and cheese, chili, and cheese dip in my smoker.
Bacon, definitely bacon. Maybe two or three different rubs? And a sweet one. I’d love to see how candied bacon is smoked. Whooee! My mouth is watering.
I would love to see you do a Texas style brisket. That one is going to take some time, though. Maybe if you did a separate brisket flat or a point that would save you some time. That chicken looked amazing. I'm stuck at work for 30 more minutes but after that I may have to get some BBQ.
Ideally. You want the second person. To slap some on simultaneously. Makes it bond better. Also. If you mix in some horse mane and tail hair. It will be stronger and less likely to crack.
Great job Andy would a small hole just above your grill allow you to insert the nozzle of a hand held sprayer, then just plug the hole afterwards, this would double up as a inspection hole as well. Can taste that meat here in Essex.
ONE DAY, while FROW-lickin' in the forest, ANDY...came upon some framework. "What's SHAKING?' Andy asked. 😊😒 A local chestnut log called out to him: 'There's a whole lot of shaking goin' on.' I never found heat 'retention' to be a problem in smoking. The problem was how to smoke low and slow. Smoke always went up the chimney, so I never worried about holding in the smoke.
haha.. true story :p I was pretty happy with the heat after it 'settled' and had dried out a bit.. i likely will put some kind of metal / foil on the inside of the roof though for longevity :)

Excellent work, Andy. Make the door a vertical double, that opens out. That way you can look inside without losing all your heat.

Woooo, smoke some fish - cod, trout, salmon whatever, and make a smoked fish pate'/dip to eat on fresh campfire bread with a nice cold one.

Greener wood and young wood helps more with smoke than well seasoned wood bcs it will burn less and slower
