I’m second generation Italian and have grown up eating delicious pasta made by my grandmothers. Your videos make me miss them so much. I have never been to Italy so this is the next best thing.
She may be tiny but she sure is the boss with the big personality! And he looks so proud of her! A masterpiece prepared by a couple of masters of their trade. Must have quality ingredients, otherwise don't bother! That delicious looking broth; would love some Mortadella with pistachios right now to snack on! I really like how expressive her eyes are and the way she looks at people/things... a bit mischievous and playful. Time to hit the second hand stores in search of a used tiny "nutmeg grater". An Encore with Angela and Gianni would be nice :)
My Dad taught my Mom to cook, so they’ve always worked together in the kitchen. His Mom taught him because she wanted both of her boys to be independent and knowledgeable, but my Mom’s Mom didn’t want anyone else in the kitchen, so Mom never learned how until she married. I LOVE watching this couple work together ❤️
Merry Christmas! It amazes me how patient these chefs are - pretty sure if I was asked to make this, after five minutes I'd end up crying and frustrated on the kitchen floor with uncooked pasta dough and filling in my mouth

Lovely way to grow older with each other. Funny I made some sauerkraut & wild mushroom pierogi to go in some soup the other day. Haven't been feeling well & fancied a bowl of comfort. Was just thinking while watching this, I got my Pasta Grannies book in August of 2020 during the fist lock-down. It, along with the great videos has vastly improved my pasta making skills, but you've also kept me slightly saner, allowed me to travel vicariously & be greatly entertained. I understand from Tim Spector that fermented foods like sauerkraut mean happy gut bacteria which in turn help to bolster your immune system. I hope the pierogis are helping. @@pastagrannies Hi Vicky, feeling a bit better now. Fermented foods do indeed seem to help gut & general health quite a bit. Plus they taste good & are fun to make. Before getting the book I wouldn't have tried making things like pierogi or other dumplings like gyoza or xiaolongbao from scratch. Just didn't have the confidence to do it. But learning about proper pasta making gave me the encouragement & skills to give it a go. Now I love making little parcels of joy from around the world & the Italian ones are still definite favourites. Haha, your parents obviously enjoyed life & had good taste. Hi 👋!!! The lady is so good at making dough and “sfoglia”. Someone enriches filling with ham (prosciutto crudo) but I agree that it has to be absolutely fresh and perfectly clean from its fat, rind and and lard based sealing putty, or it could get a rancid pork flavor, very sneaky, because it comes out rather strongly while cooking in the broth pot. Furthermore they’re not suitable for freezer storage. So I totally agree with them who didn’t add it. We also had tortellini yesterday: my mom and me already made and freeze them few days ago. thanks for your comments Andrea, I bet your tortellini were wonderful! I think one should buy prosciutto from a reliable producer. I also find these days it can have a taint from the cleaning fluids used in the chill cabinets.. best wishes, Vicky
Ms. Vicky, very nice recipe & it looks delicious & that is a wonderful couple, definitely have worked in the kitchen more than a few times. In Appalachia we would strain the finished broth then add fresh potatoes, onion, celery, carrots, for meat it would be just 1 of pork, chicken, beef, or wild game from hunting like venison, rabbit,squirrel, etc...& add the broth to a rue for thick gravy, we do not have mortadella or veal, folks let their cows grow to full size, the small weight of a calf still being milk fed would call for a higher price per pound which most folks cannot afford. We eat with buttered cornbread or biscuits with a chunk of raw onion( raw onion is a staple here) We have a saying here that 1 to many cooks in the Kitchen spoils the stew( any meal though) but not with this couple in the Kitchen. hi Simon, my understanding is the meat can be served as 'bollito misto' boiled meats with a salsa verde (a parsley, garlic, lemon zest olive oil, sauce sometimes with anchovies) Though I think if the stock is simmered for 4 hours, there's not much flavour left in the meat, hence a punchy sauce to go with them! best wishes, Vicky

I grew up in Tuscany since when i was 2 years old, they speak italian with their sweet emilian accent that reminds me my roots (province of Bologna)

My mom was from Verona, and "tortellini in brodo" is one of the flavours of my childhood. Still one of my favourite foods for a cold winter day.
