I had this growing up and we called it Passatini. My mother was from the Republic of San Marino and I haven’t had this since she passed away twenty years ago. I’ve been thinking about it a lot lately and plan to try making it thanks to you!
I love watching videos of him because he’s just so happy to be talking and showing everyone there and us what he’s making. Cooking and food makes him happy
My mom, now 93 often made this wonderful dish and passed the recipe down to me. Like you, I grate fresh nutmeg...I also add lemon zest & black pepper to the bread mixture. Thank you for the tip of adding a little flour, I never knew to do this. Your video is great! Thank you ... Viva Italia!!!
On my bucket list: to eat at his restaurant in NYC soon. I cannot wait. He is well known for his pasta. His personality is captivating and genuine. I love this guy!
I have a giant kitchen. Wanna know why? I am a high IQ individual with lots and lots of money. Simple. You have a small kitchen because maybe you don't work hard enough. Simples
That’s amazing, looks so delicious and easy! And that one is exactly my potato masher haha, it’s probably 30 years old here in my parents house. I found it so rad that I can use it for that too! Win win
@JUDGEMENT DAY He was making a reference to Marco Pierre White, you're the one missing the point here bud. Also please stop using emojis, they're for children.
The _contraption_ he uses for the passatelli, as he said, is good to make mashed potatoes, and you can also crush tomatoes for sauce, once you have boiled them, if you're not too fond of tomato peels.
It's ironic that most people who have designer kitchens don't cook at all, they make reservations or have cooks do all the cooking. What a waste. This man is a true artist he can out cook anyone even in the tiniest kitchens, he doesn't need a huge kitchen.
It’s delicious. I make it every time my children are sick. I just don’t dump an entire truffle on top of a peasant dish, but to each his own; if you can afford it, enjoy it. My potato ricer makes mine look more like spätzle, but I’m sure they taste the same.

Don't you just love people who smile when they talk? So endearing to see someone who is happy with what they do.
His family’s so cute! And his personality’s very wholesome.
@Kobe Died Lmao That’s not very nice. You hurt my feelings. :(
His child is spoiled and his wife is useless 👎
@Kobe Died Lmao are you serious? You sound like a pathetic human.

I enjoy it when chefs cook in their own kitchen and not some giant one that none of us have
I like seeing the giant kitchen that I don't have lol but it is nice to see the flow and equipment in a pro kitchen

This chef needs to make more videos. I've seen two videos from Stefano Sechhi and the food looks so good!

Essere Romagnola e vedere i passatelli nel tuo canale mi riempie di gioia! Grazie di mostrare i piatti della nostra cultura
I'm so glad he's back!! I loved his egg yolk pasta video!!
I eat this in Faenza, Italy every time I visit! Homemade by Nonna & it’s soooooo gooooood!!!!
Didn't have truffles, so used a Knorr stock cube...
Marco Pierre White would be proud

This looks beautiful! My Nonna used to make. I hope to make this soon. I can remember the amazing smell in her kitchen!
Great video! Reminds me of my family making this dish! So rare to find these gems. Bravo!
Bravissimo!
My Nonna also added grated lemon zest and finely chopped parsley to the dough mixture.

Love a bit of brodo
That tool is a potato ricer. You can still buy them. They are great for prepping potatoes for potato gnocchi as well.
You forgot a little bit of grated Lemon peel.
💯💯💯
could you please clarify the quantity of egg, crumbs and parmesan. The written recipe seems different from your video. Thanks so much
Were those eggs Cotswold Legbar?
Where are the eggs from?
Similar to spatzle

Cursed modern kitchens are so acoustically bouncy

Who TF don't like chicken and dumplings?!
When your broth has boiled for 7-8 hours, your green onion tops are no longer green. I think you are toying with us.
Is anyone else triggered by how he keeps the fridge door open ?
That's just how it is in the restaurant. It's a habit for him probably
There was 1/2 a chicken there. Why would you waste 1/2 a chicken on stock?
Black truffles just lying around in the fridge🤔
Looks like my diarrhea poop after eating cornflakes and kimchi all day
En?
Is a man-bun also required to make this dish?

Nothing like overthinking and over complicating soup.
bad thing is, everything inside a plastic
That doesn't look appealing
