You have some great choices on your list, but I would definitely choose Pop Century for the value category. I think you can’t beat the Skyliner access!
I can see why that would be a factor, but for me looking at the amenities pop century relies on people using the Skyliner and Art of Animation’s extras in order to get a full resort experience too much… But Pop is certainly an excellent choice!! Thanks for your thoughts!!
We stayed at the Boardwalk on our wedding night. It’s a beautiful hotel with great theming. The only downside, was having a room right on the boardwalk it can get noisy at night, but was fun to watch all the entertainment from our balcony.
We got a garden view room that overlooked the courtyard (with the fake grass) adjacent to the Boardwalk, could see Epcot Fireworks over the building… but you’re right, it was a little noisy!
I agree with board walk with proxy to Epcot.. I think contemporary could be a good option and grand Floridian with it's upscale dining.. also note worthy

Boardwalk is typically more money to stay than Yacht and Beach.
I would think AKL is great for adults too.
Which is strange because Boardwalk in DVC is way less points to reserve over Beach Club. AKL is fun, I agree!!
