Scallops:
- Saute scallops in 1 tablespoon of butter or olive oil for 2-3 minutes on each side.
- Add 1 tablespoon of garlic, lemon zest, and juice of 1/2 lemon, salt, pepper, and italian seasoning to taste.
Garlic Rice:
- Melt 1 tablespoon of butter. Add 2-3 Tablesoons of garlic, cooked rice, salt, pepper, garlic powder, and parsley. Fry in pan for about 5 minutes.
Garden Salad
- Half spinach and Half Romaine washed and chopped.
- Chop red onion, yellow pepper, carrots, and tomato and add to salad
- Toss salad with homemade dressing
Dressing:
- 1/2 balsamic vinegar
-1 tablespoon dijon mustard
-1 tablespoon honey
- 2 tablespoon lemon juice
-1 cup olive oil
- add 1 teaspoon of salt and 1/2 teaspoon of pepper, and garlic powder. Give a cook shake and you can store in the fridge for up to a week in an airtight container.
