- Nyonya or Peranakan cuisine is a mix of influence from the Chinese and Malay cuisines. Essentially, Peranakans are descendants of early Chinese migrants who settled in parts of Malaysia, particularly Penang, Malacca and Singapore, inter-marrying with local Malays and combines Chinese, Malay and other influences. Some of them also settled in Indonesia. Ayam pongteh or Nyonya Chicken & Potato Stew is one of the more popular dishes by Peranakans. This dish uses basic ingredients and is very easy to cook. Ingredients:
Serve 4
1 whole chicken - about 800g
1.5 cup of water
2 pieces of potatoes - sliced
2 tablespoons of dark soya sauce
1 tablespoon of fermented soya beans
1 tablespoon of sugar
1 teaspoon of tapioca flour or cornflour
8 - 9 pieces of garlic
20 pieces of shallots
Few dashes of pepper
Sedap!! I made this for dinner last night, the sauce was a killer!! made us eat double carbs - rice & French loaf - cos we ran out of rice lol...was out of sugar so I sub with couple tbsp of kecap manis, adds a nice depth to the sauce, and also caramelized the paste. Thanks to Spice & Pans, I can make this my signature dish for potluck parties :)

The peranakans use palm sugar, not white sugar n they saute the pounded shallots n garlic first followed by tauceo..

Hi Meiyi. It’s our pleasure to share our recipes. Pounder = pestle and mortar? Last time I saw my mom just wash and scrub only. Heee. We just used her method but after every use, please make sure it is completely dry before storing.

The potatoes still very hard ! It will be tastier if you boiled it longer to make them soft .

No it won’t be still hard after 15mins of cooking given the potatoes was cut into slices/thickness as in the video

Hi Roland, we most times use cooked bamboo shoots instead of potatoes but all other ingredients same. Try it for variation

Hi, should I use Russet potatoes or Indonesian (granola) potatoes? And what is fermented soya beans - is it taucheo? The taucheo I have at home is light-coloured but yours is dark. Which brand do you use?
Hihi. We used russet potatoes because they are higher in starch and lower in moisture but they don’t hold their shape well so gotta be careful when stir frying. The soya beans we used were black soya beans. I can’t remember the brand but it has a tiger on the bottle.

Hi, can I use the Korean fermented soy bean paste?
+Aaron Han Hi there. I've just asked Roland and he said it should be okay but Korean fermented soya bean paste is less salty and sweeter than Chinese version so don't add sugar first. Only add when you're almost done with the dish and then you can add sugar and salt accordingly. Hope this helps.

Hihi. Normal dark soya sauce. May we recommend you to go for premium dark soya sauce so that it’s not too salty but still can give your dish a nice dark caramel taste.
