I also feel inspired by this bartender, perfect balance between playing by the rules, being accurate and charismatic with his flair, keeping the sass within class, a showman that stays formal without boring to death, marvelous execution of the cocktail without convoluted gimmicks, classic and modern at the same time.

It is also my favourite bar in the entire World. We used to frequent it in the 1980s and 1990s because it was never too busy, and although a bit expensive, it wasn't outrageously so. I love the new barman - he seems to have captured the essence of the place.

Just for fun I decided to visit this bartender. I put my best $3,000 Louis Vuitton suit on, I pulled my Ferrari Spyder up to valet, strutted in, pulled the stool up to the bar and ordered one of these. As he was making it and squirting his egg white in, I took a very dirty ash tray and just emptied it into his ice bin just to see how he would react. It was priceless. I will post hidden cam video soon.
