    My Strawberry Marshmallow Cake is the ultimate strawberry cake recipe! I'm using Russian 'zefir' to create pillow-y, melt-in-your-mouth marshmallow layers; adding lots of fresh strawberries between sponge cake layers and frosting the cake with a strawberry buttercream! This cake is loaded with fruity, strawberry flavor!

    I've been mesmerized at all your baking Tatyana! This cake looks so divine. I love both marshmallows and strawberries. It looks a bit intimidating though for me, a novice baker. May I ask you to do a cookbook with all these wonderful confections you make available for us? You're a dear.

    As usual your cakes are delicious and beautiful. I had a little funny thing happen today as my children were drooling over this cake. Logic of a 7 year old. He asked me why I can't make this. #1 no time , patience or talent. My son said well why don't you call Tatyana and ask her to make us a cake. My four year old hands me my cell phone. 😂😂🤗of course I had to explain how I can't do that, but just thought it was funny how children think.

      agar gelatin is a seaweed based gelatin, I get mine from Amazon. It sets at room temperature

      You can definitely make this with blueberry or peaches. Just replace the strawberry jello in the zefir with peach jello :)

    Hi Tatyana .Please, answer to my question. What's the brand of the agar agar you are using. I bought one from Asian supermarket but it doesn't work. I tried several times to make a zephyr but I failed every time. Finally I found out that it's because of that proklyatiy agar. I'll appreciate ,if you reply. Thanks.

    Танечка ты умничка. I had a question about your buttercream. When I beat the room temperature butter with sugar it never gets fluffy. What can I b doing wrong. I tried with sugar with out it’s never light and fluffy.

      I'm so sorry that your buttercream is not turning out well. Try whisking the butter first without the sugar or any other ingredients for a bit until the butter is light in color. Then add the sugar. You can also try adding a few tablespoons of cream :)

    Hi Tatyana.. your cake is amazing. Im going to give this a try next weekend. I just have a quick question for the marsmalow,if i can reduce the amount of sugar(im worried that it willbe too sweet) coz the butter cream has loads of sugar too...please let me know..thank you

      Hi! I recommend keeping the sugar amount the same. The sugar is important to create the syrup and help set the meringue. You can try using less sugar in the buttercream :)

      Yes, you can definitely make the marshmallow ahead of time, up to 3 days :)

      Hi Shirley, unfortunately, this recipe will only work with agar. It sets completely differently. I get mine on Amazon :)

    I looked for this same question but didn't see it. do you have to use agar agar? can I just use regular gelatin if I put it in the fridge to set?

      Unfortunately, these just don't set the same with regular gelatin. The agar gelatin sets much firmer and at room temperature, it needs to be setting as you pipe the marshmallow to get the beautiful shape.

      Unfortunately, agar gelatin is the only gelatin that will work for the marshmallow. I buy mine online from Amazon

    Would the zefir be okay if i put it in the freezer? Like would it thaw after I took it out?

      The zefir will set at room temperature. If you want to place it into the freezer for keeping, then yes, it should defrost...

      Hi! This will be perfect for Mother's Day! :) I wouldn't add the strawberries directly into the zefir but you can definitely add additional strawberries between the zefir layers :)

      If you are already reducing the ingredients, I wouldn't change the temp but the timing would be just a few minutes less :)

      Unfortunately, regular gelatin just won't hold up the same. This recipe will only work with agar

    Hello Tatyana, it’s me again!!! 😍😍
    I have a question, if I want to make only 1 layer of zypher sweets.. how can divide the egg in to half recipe?
    Btw, this cake is a BOOM.. now a lot of my family & friends ask me to make this cake for them 😍😍

      That's awesome! I'm so glad it's a hit with everyone! 3 egg whites is approximately 100g, you can use a scale if you want to be super accurate. Or, you can just use 2 egg whites
