Wyke cheddar is £10 a kilo in any British supermarket. It's cheap, mass produced, plastic bag cheddar. You can buy the same stuff with a Lidl label for £7.50 per kilo. It's basic every day cheddar with average flavour and moist texture. On the other hand you can buy genuine truckle formed cheddar that's air matured without plastic bag treatment, for around £16 a kilo from a quality delicatessen. Mature versions are salty and flavoursome with crunchy textures in a creamy hard cheese. If you just paid $200, you got mugged.
Best cheese I've tried is a soft blue called Montagnolo Affine. It's German, not very expensive, and available at Tesco, so not hard to find. They also have a white label hard cheddar called Coastal Bite, which is the best hard cheese I've ever tried. Made for Tesco in Somerset by some unnamed producer. Again, dirt cheap.

They're referring to a Vintage Cheddar that Wyke Farms produced (unsure if its still available, maybe it is available by special order or it was just a limited time thing, not too sure) - Their vintage cheddar had gold leaf wrap and white truffles in it, it was priced around $190/lb
@@goldHydrangeas Yeah, Definitely the truffles and gold making it that price, Primarily the white truffles, they sell for about $100 per half ounce, the gold leaf is not too bad price wise, at around $10 per 12x12 inch sheet and probably less wholesale. The cheddar used might be aged a bit longer than their other versions as well, as they use their vintage cheddar, aged 14 months I think in the special version, not too sure of its age or its quality though as I've sadly never had it, maybe one day!
