This relatively quick and simple stew comes from the Caribbean and includes ingredients like scotch bonnet peppers, onions, tomatoes, garlic, ginger, and browning seasoning, which lends the dish its rich flavor and color.

Repping from Jamaica 🇯🇲🇯🇲🇯🇲 .....usually we would cut the chicken into smaller pieces so it absorbs the flavour better. If you want to make this and don't have chicken stock, feel free to use water.
Love love Love how authentic this is ♥️🇯🇲
SexcGhirl I agree on cutting the chicken smaller plus it’ll cook quicker and evenly.
The fact that he scored all the chicken is the same as cutting it up plus it's not like he's making curry chicken and there actually 2 ways for doing it so whether he didnt cut it up are not it's still just as good I personally dont like when stew chicken is cut up but to each is own
Cut up chicken leaves you with bone fragments all over the stew, that feel like you cracked a tooth everytime you bite down lol
I still love my Jamaicans though ❤
I don't trust like that your name
This is not how we cook brown stewed chicken in Jamaica at all. Totally wrong.
This is a classic dish throughout the whole Caribbean
Mark Leviathan by thinking everything is racist then you’re basically treating people other ways because of their race, you become the only thing you swore to destroy, a racist...
Bucatini 😍😍😍... his face.. he was like now I'm allowed on the counter? What's going on? 😂
This is the guy that made that fire-ass jerk chicken
Oh yeah, that was cool
That was fire! right down to the burning pimento wood! We are in a fire ban cuz covid .. but when it lifts ... mmm need him to do beef next! with some bami
@AnnEasyCooking who r u? ... not this guy in the vid ... that's obvious...
@AnnEasyCooking just seemed like you were taking credit with "I hope you like my other recipe
" like its this Chefs private channel. I left you some advice on ur chan. look them up. trust me ... worth the time. try stuff along the way make ur chan a self learning chanel as ppl learn along with you trying recp's in the books. good luck!
Just gotta say two things you don't want to hear in a sentence due to implications.."fire ass" and "jerk [anything]"..if you're not careful one is a result of the other
This is a staple in many Caribbean countries not only Jamaica, make it and try it out, you'll love it.
🇬🇩🇬🇩🇬🇩
@Mark Leviathan you did it wrong then lol no other answer to that.
But on a serious note you probably added to much browing, or browned to sugar too much.
Did he wash that chicken with some lime/lemon before he seasoned it?
@@neattylulu9817 somehow I feel like he didn't.
Thank you for explaining everything so clearly! My bf is Jamaican and I have been trying to learn some more Jamaican dishes to cook for him. Gonna surprise him with this ❤️
Terri annual’s kitchen on here as simple step by step recipes
I remember going to my Jamaican friends place and having diner with his fam, MAN the smell, the flavours, the vibe was off the chain.
This is a staple in Trinidad 🇹🇹 too . Good vibes chef 🙌🏿
Yh the process looking a bit different though
Facts rice macaroni pie aka Mac n cheese but waaay better callaloo some fry plantains and a cup of ice cold sorrel minus the Dog hair smh lol n we set for Sunday dinner Trini 2 da bone 🇹🇹
TRINISPARTAN69 where the green seasoning?? 😂

and Guyana! :)
I just made this and I was friggin delicious!! I just wish they had put all the measurements in the video or at least in the description it would've been so much simpler to follow. Thanks chef!!!
Fo you have the measurements and recipe?
We don’t use measurement in jamaica. If you‘re not sure if its enough seasoning…. Just put more
Taste as you go along
Great! Nothing wasted from marination.
This video was great it was nice and casual yet informative.
He seems to be a great host, with the skills to back it! I would watch more.
Excellent job of getting your ideas and thoughts across, I'm a 58 year old Scot Canadian and I actually believe that I can make this dish, right now !
The dish looks superb and I cannot wait to taste it.
You should have your own show, man.
The Brown Stew Chicken looked delicious and easy to follow. Kwame has the perfect personality for TV!
Never had this dish before in my life and I don't have the sauces he had BUT I AM SUPER TEMPTED TO BUY THEM NOW TO MAKE IT
You don't need all those sauces. What some do is carmelized sugar. Add some sugar to hot oil and watch it come to a syrup/paste, then you add in your chicken with some water and stir. For more flavour add onions, garlic, pepper, salt, black pepper, and any seasonings you have
Christine go on amazon for “ gravy browning” if you can’t find it where you are and Pinterest is great for any recipe from any ethnicity
Watched almost all of the Brown stew chicken videos before picking one...his video is the best, most professional. This is my pick. Thanks!
We make the same thing in Guyana, the only exception is we usually cut the meat into smaller chunks so it browns more evenly, and we have big families so cutting the meat into smaller a bits ensures everyone get a bite lol.
Jamaicans cut up the meat smaller too for the same reason. I don't where he got those big chunks from
Yup, this ain't half bad yakno.
When he was tasting it. When gravy is so good you can drink it like soup💪
When you have the left over gravy and you save it, heat it back up and dunk harddough bread in it....
It sweet mi yuh seeeeee. Mi luv eeeit.
Bright blessings ❤ 💛 💚 🕉 👊
I enjoy making this meal for my family.
I could listen to and watch this dude forever: skills, knowledge, charming AF ... and the last second dog is just the icing on the cake, BIG LOVE!
Kwame! What a great chef. Well deserved of the rising chef award last year.
Amazing job!!! A must with rice
In Trinidad we heat our sugar in the pot and after it starts to bubble we then throw the chicken on top which gives the brown colour to the meat.
I would love some more Caribbean recipes, if possible. This was very interesting. 🙂
Awww, Bucatini. 😍
🇩🇴 staple dish here as well
with some avocados
emera the best! 🇧🇸
Yess we love us some pollo guisado 🇩🇴❤️
It’s 2:20 in the morning and I want some of that. Looks amazing.

Ackee and saltfish? They r too cowardly for that 😅
Yyyyyoooooo! Great 👍🏿 job, you explained the dish well, I’m going to try making this dish for my family.
Thanks again
He lost me with the DOG in the kitchen. I know every Caribbean person who saw that lost it lol
Damn that sauce looked WICKED good
Yum that looks absolutely amazing & mouthwatering.
I've been on Indian food the past 5-6 weeks, and, after watching this video, I'm havin' this Saturday!!!
He's cute. 😍
why do you feel like you should pass a mean ass comment about someone you never met or know? Love and good vibes or keep your neg comments to yourself ....please and thank you
Mark Leviathan 🤣😂😂
@Mark Leviathan don't be a clown.
I’ve made this dish but I got the recipe from a Jamaican friend. I omitted the scotch bonnet but it was still amazing. The only dishes I’ve ever eaten that was more flavorful was Rendang and Beef Biryani. With the addition of Brown Stew Chick, the three are my favorite dishes. Thanks for sharing your kitchen and recipe.
Omg I’ve been wanting go to his restaurant but it has been shut down because of Covid-19 :(
anyone know if there’s an ingredients list for this? couldnt find it on the vice/munchies website
Man, you crushed it! that was awesome. I hope to see more of your creations.
thanks for sharing.
Who else is watching at around 3 am
I made this recipe just the other day and it was delicious but I just had leftovers today and Oh My God how good this is. Thank you for sharing. This will go into a regular rotation.
For me... White rice or Rice and Peas with this... And the rice would almost be swimming in that gravy... Yummers🤪😋😍!!! Blessings from 🇯🇲... 🙏🏽
WE LOVE KWAME
I peep that deathly hallows tattoo ❤ thanks for sharing that recipe.
I’m from Toronto (Caribbean descent) and I was in D.C. in February and I went to Kith and Kin, your restaurant is bomb! Loved it.
I love this guy, his story is so humble and he’s so talented
My whole family is Caribbean and I have never seen this in my life
We love Carribeanfood. This recipe look awseome, looks so great with all the colors. A must try
Ty😊😊😊
A true Jamaican would've never taken out the scotch bonnet!
Nice simple one pot meal! Hats off. He is very good at explaining the process. On my way into the kitchen right now!!!
This looks incredible i cant wait to make it myself.
1:52 Remember kids, don't let it sit in the fridge for 50 years thinking it would tastes like Gordon's cooking.
I was trying to boil things down to a nice spicy joke for you folks, but I'll just have to *Stew* on it for a while!
That was funny, your comment... 🤗
Now, read mine.
Deborah Kennedy... ?
Sounds fabulous. I love simple stewy stuff like this.
"...cuz I can't keep stirring, I have to eat it NOW!". Oh, I feel you bro. 😅 Great host and fine content as usual, thank you Munchies.
I can't wait to cook. Men so handsome when they know how cook.. Like me.. Yaiiy
WHAT A NICE SURPRISE AT THE END
looks like absolute fire
fantastic job by the young man, really enjoyed it
I am marinating the chicken now! I don't have any ginger or peri peri. So I threw some fish sauce in with the Worcestershire sauce and some Sambal Chili paste in for heat! let's see how this turns out!
How many supermarket lines will I stand in to make this stew?
Oh that looks delicious, great job!! Adding it to my recipes!!!
I missed eating this food. Thanks for sharing munchies!
Kwame is back! You beautiful being youuuuu 🤩
I understand that the Caribbeans have a lot of experience cooking their enemies too.
You'd be correct in assuming that we have experience cooking our enemies. This recipe is reserved for chicken or pork and on occassion beef. Our enemies are barbecued so you would be hard pressed to find them in a pot of brown stew. But anything goes when it comes to cooking as an art.
Cool recipe man, tried it tonight and 🤤
"This looks burned to most people."
"We" know who you are talking about. ✊🏾
The Jews?
I genuinely dont think he meant anything to do with race. Most normal people dont try and add weird hidden racial messages into their conversations.
I'm from the UK so maybe it's different in the US (it does seem like a lot of you are obsessed with skin colour, regardless of your ethnicity), but your assumption is very odd.
@@semi-skimmedmilk4480 no it's for sure the Jews trust me
@@semi-skimmedmilk4480 Thank you
@@bobdabuilder6618 i'm British, I get that you're trying to be sarcastic, but it's not working very well.
The frilly part of the green onion are the roots btw. I'm sure you knew that
This guy knows what he is doing !!!
Great video! That looks hella good. Could we get an ingredients list? Thank u!
very much enjoyed - will try recipe
DC has always had great Caribbean foods
Try it with ground sweet bell peppers instead of the sugar. More nutritious and just as delish.
That looks so good man. Thanks for introducing me to a new dish. Can't wait to try this some day.
Who is this guy? I need more of him lol.
I love him.
It’s a staple for us too in DR🇩🇴🇩🇴 u have to add that sugar to give it some color even tho for some it may look burnt, I call it flavaaa 😭❤️❤️
This dude looks like Jarvis Johnson.
Yeah black people look alike
Much cooler tho

Wow we Grenadians definitely make it differently but same applies...much Love to stew chicken which I made literally this weekend hehe
Easy, quick, delicious recipe. Great video!
I was going to make chicken adobo this week but now.... thanks for this! :)
Hey when are you going to do some escovitch snapper fish or Ackee & Salted Cod fish. Greetings from Jamaica 🇯🇲. The Brown Stew chicken looks delicious.
I can hear your dog... My dogs do that too when the meat comes out to trim lol
Looking forward to making this!
This looks so good. I’ve never seen this on the menus at the Jamaican restaurants I’ve been to but then I’ve only been to like 3.
M Vee cause it takes too long lolll, but we’ll worth the wait !
Bless up bredren! Took me home here
The recipes for these are NEVER in the description.
Looks delish! What is that sauce he used after the browning sauce that was supposed to be better than Worcestershire?
Love seeing this on munchies made pelau yesterday Caribbean style obviously so good ☺️
Gotta donate.. that food looks bomb and Buccatini sealed the deal!❤❤
Glad I stumbled on this video. Going to definitely attempt this.
That knife looks pretty fn sharp
As a Trinidadian, it’s sounds weird when you say “brown stew chicken” instead of “stew chicken”
Meghan Rambert he might be of Jamaican descent...I think they’re the only one island in the Caribbean who says it that way.
Read and replied to your comment before he mentioned Jamaica.
@meghan rambert @LuClu81 Being from the Bahamas we also say Brown Stew, but i have heard other people in my country also call it stew chicken. I think it's just family culture, because within the Caribbean culture a lot of things have different names.
Boomer Bah yeah it’s definitely a family thing bc Im from The Bahamas too and I’ve just known it as stew chicken
A lot of countries have stew chicken. Black Americans in the south cook stew chicken. Countries in Asia and Africa cook stew chicken. But when you say Brown stew chicken, people across the world knows that this dish is from the Caribbean. So it's not weird. It's smart of Jamaica, Bahamas and some of the other Caribbean islands to differentiate their cuisine from the rest of the world because a lot of these countries are copying Caribbean food and calling it something different. The lastest thing now is coconut rice with beans. They cannot cook Caribbean rice and peas so they they try copy it. Also, all of a sudden everybody in the world start to cook with coconut milk. That is a big thing now because they watching a lot of Caribbean cooking videos. So in today's world you have to put a signiture name on all of your meals, otherwise somebody out there is going to copy it, steal it.
