@@PoeLemic never heard of that place, but based off the ad video for the restaurant i watched, i think it would work. their sauce looks thick enough to stay on a spoon so i’d say try it. but i’ve never had it before so if you make it and it’s to thick with heavy cream and to thin with milk, try a mixture of the 2 to get a better consistency since i’m guessing you’ve tried that restaurant meal and will be able to accurately judge it.

You are so right about the cheese! When i first started trying to make this I used a melting cheese...big mistake. I caught the guy at the grocery store delivering the cheese dip in the Mexican food section of the deli and he showed me they use white American cheese. Personally I would use pickled jalapenos, NICE JOB!!!

Land O Lakes white American cheese had been discontinued so bought some Boar’s Head which is more expensive and excellent quality. Used the mild chiles since my roommates don’t love spicy dip and then used whipping cream. I’d put it up against any Mexican restaurant cheese dip I’ve ever eaten at. Common sense but eat it as soon as you pull it off the stove top before it becomes too thick. Tasted incredible!

Okay, I just found your channel and subbed. But, how I found you is that I was searching for a Queso Dip where we can copycat Taco Cabana's "queso blanco enchiladas taco cabana". We just ate them tonight (because of a $5.00-OFF coupon), and we got two sets of them. One was chicken and other was beef. Man, beef was really good. Chicken not too good or just so-so. The chicken was either burnt or too much seasoning, so it clashed with the recipe. But, the beef ... WOW. It was superb. Maybe, could you try to use this dip and make some queso blanco enchiladas like Taco Cabana has? Also, know that lot of people think it costs too much to eat out now, so I'd start copycatting stuff. That's why a lot of people go on UA-cam to find videos that duplicate (i.e., "Copycat") what is at restaurants. Because we spent $16 bucks, and it would have been $21 dollars. No way am I gonna spend $9.49 for beef plate and $9.69 for chicken. HELL NO. Outrageous for what we got. That's last time, unless I get another coupon. So, please, if time, give your thoughts on what I have said, Chef Kristi. Thanks, Poe.

Good video the only thing I might do different is shred the cheese as it will melt a little quicker and I would also use a double boiler to prevent burning.
Mehdi Escobar I know mozzarella is practical and one of the best cheeses to add for a smooth and creamy texture to any cheese sauce but it's not traditional and it's not as flavorful as monterey jack. Wasn't meaning to dog on anyone for what cheese they like, just being funny.
Maybe the same as Mexican restaurants but with the canned chilies, I don’t think it would overthrow it at all. I use Queso Supremo shredded chihuahua authentic quesadilla cheese, heavy cream and fresh cut up jalapeños.
The Mexican restaurant near us makes this with no chunks, or green chilies in this case. It basically looks like half and half cream. This is the only way we all eat quezo. Store bought has the chunks,. Can you advise how it could be made with no chunks in the cheese? Is it a spice added?

Using extra heavy cream rather than milk (which is much thinner) is also good for those who like a richer, thicker type of consistency.

White American really is the way to go for homemade queso. I typically add a bit of diced jalepeno and use mild green chili's. 👍
