  • Learn to bake a classic devil's food cake with Anna. Click on 'SHOW MORE' below for recipe ingredients and baking instructions.
    Makes a 2-layer, 8-inch cake.
    Devil's Food Cake ingredients:
    1 ½ cup (195 g) cake and pastry flour
    1 ⅓ cup (295 g) superfine (quick dissolve) sugar
    ½ cup (60 g) Dutch process cocoa powder
    ¾ tsp (4 g) baking soda
    ¼ tsp (2 g) salt
    ½ cup (115 g) cool, unsalted butter, cut into pieces
    ½ cup (125 ml) hot, strong brewed coffee
    ½ cup (125 ml) milk
    1 tsp (5 ml) vanilla extract
    2 large large eggs, room temperature
    Ingredients for the Fudge Frosting:
    12 oz (340 g) semisweet chocolate, chopped
    1 ¾ (425 ml) cup whipping cream
    ½ cup (125 ml) sour cream
    ½ (3 ml) tsp vanilla extract
    1 pinch salt
    Baking Directions for the Cake:
    1. For the cake, preheat the oven to 350ºF (180ºC). Grease 2 8-inch cake pans and line the bottoms with parchment. Dust the sides of the pans with flour, tapping out any excess flour.
    2. Sift the flour, sugar, cocoa powder, baking soda and salt into a large mixing bowl or into the bowl of a stand mixer fitted with the paddle attachment. Add the butter cutting it in (if in a large bowl, use electric beaters) until the mixture is a fine crumble (like the texture of fine breadcrumbs) and no large pieces of butter are visible.
    3. Stir the hot coffee, milk and vanilla together and add it all at once to the flour mixture, blending until smooth. Break the eggs into a small dish and stir them with a fork and then add them to the batter, again blending on medium speed just until smooth (the batter will be very fluid). Divide the batter evenly between the prepared pans and tap them on the counter to eliminate any bubbles.
    4. Bake the cakes for about 30 minutes, until a tester inserted in the centre of the cake comes out clean. Cool the cakes for 20 minutes in their pans, then tip out onto a cooling rack to cool completely to room temperature. The cakes can be baked a day ahead, wrapped and stored at room temperature before frosting.
    Directions for the Fudge Frosting
    1. For the frosting, place the chocolate and cream in a metal bowl and place it over a pot of barely simmering water. Stir the chocolate and cream occasionally and gently until all the chocolate has melted and the mixture is smooth. Remove the bowl from the heat and whisk in the sour cream, vanilla and salt. Let the mixture cool completely to room temperature, stir occasionally (you can chill the mixture for just a few minutes to start it setting, then let it continue to cool naturally at room temperature). Once cooled to a thicker consistency, whisk by hand to thicken just until spreadable consistency (do not whip vigorously or with electric beaters).
    2. Place the first cake layers on your serving plate and, if needed, trim the cake to level it. Spread a generous layer of the frosting over the top of the cake. Trim the second cake, if needed and place this on top of the first cake layer. Spread frosting over the top and then the sides of the cake, using swirling motion with your spatula to create a nice design. Chill the cake for at least 2 hours, or until ready to serve.
    3. The cake will keep, refrigerated, for up to 3 days.

    I tried this recipe for the first time with fear in me! Guess what. It came out so well. Thank you Anna Olson for sharing the recipe. I always wanted to bake a chocolate without using ready made cake flour. My chocolate frosting turned out to be like a blanket. I didn’t have heavy cream at home so I used fresh cream. But my friends love the cake! The chocolate cake itself is great!

      All in one - Not at all but I made it with Lindt 70%.. Everyone in my family loved it but personally, I felt it tasted a bit bitter. Next time, I’m gonna try with 50%

    I tried this recipe. It was the best chocolate cake I've ever made! I just used gluten free flour instead of the white flour and I got the same result and I added also about 50 grams of melted chocolate to my dough and I
    Soaked my cakes with coffee syrup. Thank you so much Mrs. Anna Olsen for this recipe.

    After watching your video, I went and tried that cake recipe. It was SO easy to put together, even down to the nice smooth ganache. It tasted great too. Thanks for a more simple recipe than most of them we see in cookbooks! Reverse Creaming is also good, we think.

    This cake is to die for! Receipe is so easy to follow because she is so great with directions. Next time I make it I will let the frosting cool overnight and frost the next day. It takes hours for it to firm up. Two hours is not enough time.

    Just tried this cake and this is absolutely amazing! I am no pro when it comes to baking a cake and I was turning skeptical when during baking the cake started forming weird color and reshaping into a dome. But all the worries were for nothing. It has such a deep chocolate taste. It's an absolute treat for your taste buds 😉
    As my cake has just cooled and I was tasting it from the leftover scrapes after levelling it, I am just so happy 😁. I am going to top it with a chocolate buttercream. Hope the exterior deco turns out good as well.

      i was just going to ask if i could use all purspose flower and regular hershey´s cocoa powder as were i live it is very difficult to get baking ingredients... thak you so much!!

    Made this for our little July 4th celebration and it was delicious! I did have a bit of trouble when I was frosting the cake because the frosting was starting to melt and was pooling around my cake base. I was able to fix it by popping it into the fridge for about an hour and then I was able to finish frosting it. By the next day, only a little slice was left and no one's telling who hid it.

    for people who are trying to decide which cake to bake, this is it. ive tried this recipe plenty of time and every time it has turned out absolutely gorgeous.
    you can stop looking through recipes(and waste your time) and just make this one.

    cocoa powder the sides of the pan instead of flour so when cakes come out, they are not looking white on the surface. Add 1/3 cup buttermilk to make it moist. If you shake the batter in the pan before putting in the oven, you get rid of air inside the batter and when the cake comes out, it has no holes on top

      Not true about the using cocoa powder over flour. I’ve always dusted with flour and my cakes have never had a white surface

      What difference does it make if you're frosting the cake no one's going to see the flour on the sides anyway.

    Hi Anna... I would like to have a tutorial on the different kinds of chocolate.... Tempering process.... Difference between compound chocolate n couverture chocolate.. Can compound chocolate be used for making ganache or mousse..or is it meant only for decorations... Pls reply...

    What can we use as a substitute for sour cream in the frosting. Has anyone tried greek yogurt???
    UPDATE: Ok so I tried replacing sour cream with hung curd for the frosting and it did not disappoint 😊 Happy me!!!!
    The result was a super moist cake and of course FUDGY Frosting😁
