I used to work at din tai fung. just so you know they use a small splash of broth( chicken) in the mixture that you made after the chili oil. great recipe as always !!
I just made these and my eyes almost bugged out. These are so freaking good I could barely handle it! It was a bit of a hunt finding black vinegar but I'm so glad I know about it now! I made this with chili powder I brought back from Thailand and holy cow, it is not messing around. My kitchen was a radioactive zone for a while after I made the oil! Truly though, I'm so happy I can make this. It's just as good at the version at DTF and being in control of the ingredients is great. SL, I love you! Thank you for putting me back in touch with my roots!
I LOVE this recipe for Sichuan Chili Oil…I know Seonkyong has come out with a couple other “extra” chili oil versions since this, but this is the first one I tried…I ALWAYS seem to come back to this one if I feel the need to “stray” and try other versions. I put it on EVERYTHING, including eggs and of course, dumplings. It’s sublime while adding to Brussels sprouts with bacon - gives it the extra kick that takes them over the top! Carrots and other crudite would be wonderful, too - thanks for the idea!
Ok I'll just come out and say it, come what may. The first shot of the video with the boiling oil instantly frying the garlic and chili flakes did something naughty to my body that I can't explain in polite company.

Let me just say one word for the chili oil, AMAZING! I made this for dinner tonight and it awesome. I found myself testing too many times the oil once made. I wanted to dip this in bread it was so good. I did not have the pepper corns or black vinegar but used balsamic to sub and it was really good. I used the pepper flakes for the first time but scaled to 2 tbsp but will use 3 next time since it was not as bad as I thought it would be, spice wise. Thanks for staple recipe for my family!!

Made this yesterday on a whim - skipped on the Sichuan pepper corn tho, since I didn't have any, but it turned out amazing anyways. Today I made the dumplings from the previous video, I boiled a few and fried in a pan a couple that I bursted during preparation, then covered everything with this chili oil. Heavenly! We love Asian food at home. It’s fresh tasty and so much cheaper than going out. We are a family of 6, so going out to Chinese gets expensive. The explanation of Szechuan pepper of you was what ive been looking for awhile after i had hongkong spicy dumbling i keep looking for the key ingredient that make the spicy sauce so distinctively stingling.
Top those wonton with some fried shallots... Would be heaven! When I make my chilli oil, I like to infuse the oil with additional Chinese flavours like cinnamon, star anise, bay leaf, black cardamom, Szechuan green peppercorn, etc.

My taste buds were gone the moment I took a bite lol but I could not pinpoint what spice it was so I came here to your channel to find out. Now I know it was Szechuan peppercorn, your description of what happens in your mouth when eating this peppercorn is on point. Mixing hoisin sauce with that chilli oil also makes a really delicious sauce for boiled or steamed wonton as well.
