    As a resident of the deep south (Georgia/USA), my family still farms and raises livestock. In the spring and summer we put up vegetables and in the fall we make sausage. This coming fall we will be making this wonderful recipe. Thank ya'll so much for sharing.

    Fun fact: finding good 'Nduja is also difficult in Italy, especially northern Italy. And you might think that if it is hard to get in northern Italy, should be easy in the southern part, but nope, only in Calabria you can find real freshly made godsend 'Nduja. Even in Sicily, that is just 15 minutes of ferry away from Calabria, is hard to find unless you know where to order it.

    You’ll never guess. There is an Italian delicatessen up the road about a 10 minute walk from our home in London and I found some! We got 500g of the stuff. Self control is out of the window here! X

    I got sent this link and I told my friends: "DUDE !! Ernest Borgnine is teaching me how to make 'NDUJA !!!" They were all like "what is 'NDUJA?"
    I said, "I have NO idea, but 2 months from now it is going to be AWESOME !!" This will be my first hanging sausage and I can't wait to try it. Thank you guys, so very much !

    Mexican Chorizo, a soft, spreadable, uncooked spicy sausage available at most US supermarkets, has an ingredient and flavor profile quite similar to n'duja. It can be removed from it's packaging, formed into a log and wrapped tightly in aluminum foil, then steamed for ca. 20 minutes (or until a meat thermometer inserted into to the center reads 165F). After steaming and resting for about 10 minutes, I add a tablespoon or two of Calabrian Chili Sauce to "ramp up" the Calabrian flavors. I think this is an adequate substitute for the real thing, and arguably superior to most of the disappointing options online. Just a thought for those who may be a bit intimidated making a genuine n'duja from scratch at home.

      Roberto Pisano Quite right. A Mexican friend of mine suggested I try chorizo. I had no idea what it is, didn't know what to do with it, then hit on the same idea you had, to use it as a substitute for nduja. I highly recommend it. I don't like spicy food, but I recommend this.

    I moved to Abruzzo (san buono) in april 2023. I discovered your youtube channel and am absolutely addicted. It is helping me acclimate to Italy, to italian cooking, and just makes me smile. I have been having fantasies about going to Dasa for one of your cooking weeks. I love that you and Harper have made a difference in Dasa and brought hope to the village of possible economic improvement. San Buono is about 800 people also but we are very fortunate to still have an elementary school and many young people. I adore Italy and especially my new home.

    Every time I watch one of your videos in Italy the first thing I think of is I'm glad Eva is able to visit her family in Italy. When you get a little older you realize how precious your parents are. See them as often as you can - its as good for you as it is for them.

    Here in Spain, we have something similar called 'Sobrasada' it is said that the best one, is made in Mallorca (which is true)

      In Calabria (and southern Italy in general) we have another kind of sausage which has a similar name to yours, called "Soppressata", but it has entirely different flavor and texture

      Oriol fernandez pinar, the south of Italy was ruled by the Spanish monarchs for a long time... Sometimes I wonder why spain and south of Italy have some food which are the same: is the south of Italy who copied from spain or spain copied from the South of italy?

    I hadn't watched this in awhile, and I'm surprised at how much better the newer videos have gotten, which is odd, because one of the distinguishing features of Pasta Grammar videos has always been their quality. Harper has alway done a really good job on production values, but the newer ones have certainly gotten better, and Eva has gotten more comfortable in front of the camera. So keep up the great work, Harper and Eva. You spoil us in ways we don't deserve.

    Soppressata has Roman origins, it was used to preserve meat for long periods. the soppressata we know today dates back to 1400 always in Italy. With the Spanish domination of southern Italy, the soppressata was also spread in Spain but only starting from 1500 with the importation of chilli from the Americas was the Nduja born. The first to use chilli pepper in the soppressata of Italian origin were the Spaniards, then it spread to the kingdom of the two Sicilies and from there, between the union of soppressata and peperoncino, the Nduja was born.

    Eva and Harper ❤️❤️❤️ I have just recently found your channel and I am thankful for what you are doing. I am an Italian / American with a love for my Italian heritage. My fathers family comes from Sant’ Andrea Apostolo dello Ionio. Eva once spoke of living in Dasa which is not far away, maybe 50km. I have only been to Sant’ Andrea once when I was a small boy and long to go back soon. I am now working to gain dual citizenship via Jure Sanguinas and plan to spend a lot of time in Italy when I retire from my job. Thank you again for posting these wonderful videos.

    A calabrian's basement it's unique....i remember the same basement when in my childhood i goes in calabria to visit my grandparents...the smells when you go inside it's unique...eva you should let harper taste calabrian rolled pancetta and straight pancetta...we used to have those hanging in our basement too....Grazie per la ricetta, non avevo mai visto farla!     I’m remembering my dad, he was Sicilian, we didn’t make ‘nduja, but other types of salami. But we had the same meat grinder to grind the meat by hand.
    So nice to see again! Bravo Salvatore! I hope Harper and Eva stay in Italy long enough to try the homemade ‘nduja!

    I ordered Nduja online from Sogno Tuscano and made the pasta dish. It was just ridiculously delicious. I could not stop eating it until I could no longer move. Expensive but worth it. As a side note, does anyone else think that Ava's father, Salvatore, played the older Assassin at the Opera in Godfather II?

    My husband bought some salami on line from Zingerman's Deli in Ann Arbor. When we opened the box, I was stunned to see two Nduja! Which I recognized because of last week's video! We tried it right away, spread on a bit of bread, and it was very tasty! I am excited now to use it in pasta sauce.

    Eva is a true Italian wife. The joy she finds in you LOVING the food she makes... I love it . It just makes me happy . My husband is 1/4 Italian. I know that look of sheer joy of good food.

    I remember when I first had Nduja I ate the whole package in 2 days. So good. If you live in a city in the northeast you should be able to find it. Actually Amazon carries it

    This was an awesome episode. It was very cool to see Eva in her element working with her dad. You get the sense that they used to do that all the time together when she was a kid. And of course the dish looks absolutely amazing!

    Eva's hair in the thumbnail is just incredible. So lush and curly. So happy that she was able to visit home with Covid still a major restriction on travel. The vids from Italy have been so much fun to watch and enjoy. Lastly, Eva's papa, Turi, is a treasure.

    I see these videos for the love of Harper and Eva. After dating a Sicilian, i too act like Harper. The summers in Italy 🇮🇹 and summer meals have amazed me. Thank you both and now Salvatore as well. We are very lucky to have an Eataly here in Boston. Thanks for all the videos.

    Getting hold of 'Nduja in England, in my experience anyway, is next to impossible, maybe making it from scratch is the way to go, so thanks for this one! Side note: Ava's relationship with her Father is the dearest thing!

      Waitrose! And my local farmer's market. Those have it. You can try your local markets. Admittedly I am in a hipster town, Edinburgh.

    So I found Ńduja at an Italian Import store here in Salt Lake City, Utah called Caputo's. Bought some and tasted it on bread. It was lovely. Made an Ńduja and Fennel sauce with rigatoni all in one pot. What a delightful enlightening bit of Italian love. It has rocketed to the top of my favorites list.
