Blueberries (thawed from frozen or fresh)
2 cups AP flour
1 tsp baking soda
1 tsp baking powder
2 Tbsp sugar
1/2 tsp salt
2 cups buttermilk
2 eggs
3 Tbsp melted butter
Mix dry ingredients, then add eggs and beat slightly. Add buttermilk and butter, and mix (but leave lumpy). Spoon onto buttered griddle, adding blueberries on top.

Often the first pancake is a flop is because people tend to put a bit too much oil or butter in the frying pan and they don't cook quite properly, pancakes really only need the slightest hint of oil on the frying pan, just enough to prevent sticking and that way they cook really well. The first pancake tends to soak up the excess oil.
One should never push down on the pancake while it is cooking. Defeats the “fluffy” part.
Anybody like the sound of the buttermilk as he pours it into the measuring cup?
I just saw the title of this video and had to see your version. It is almost the same as mine, but I do a little lemon zest and juice. The lemon helps to balance out the sweetness from the blueberries, and I believe blueberry should always be with a little lemon. try that the next time you make these. I sure you will enjoy them.

Trust me. Use the Alton Brown recipe from his 'Good Eats' show. It's been a staple for us for around twenty years. Oh, crack your eggs into a separate bowl... unless you like bits of shell in your food.

For what you call your throw away pancake, your skillet is too hot. The rule is hot pan cold oil or butter. let melt or get heated some then put in your batter.

Sam, you mention that you use the add water mix and it's okay. I agree. I use to represent a large baking mix company that starts with a "K". Their sales reps would come in town to do food shows and demo some of their more popular mixes. They always would demo their pancake mix. They would substitute the water with their favorite beer. They tasted just like sourdough pancakes. Please give it a try if you haven't already done so.

Stater Bros had the best buttermilk around but discontinued it. Lucerne has the next best. Knuedsen is not even close. This is a good recipe with just a little more effort, a winner hands down.

This isn't the best recipe. Batter came out too thick for my liking & made cooking them a mess. I even diluted the recipe with milk. Flavor was ok but only if you're adding mixins like blueberries or chocolate chips. Glad I tried it but it wouldn't be my go to.

How can Sam not know the painting guy? And by the painting guy, we mean Bob Ross. Look him up Sam. His paintings are probably better than your cooking. We know a good painting when we see one... no so much about food. It may look good, but not so good taste. I’m a big fan tho.
