I've watched half a dozen of your vids and I'd like to know what rack height you use in the oven as you seem to cut that part out? I'm looking foward to trying your poolish recipe.
If I might indulge just a little, I am a former journalist and would love to interview you on a video conference and talk to you about making pizza, why you got into it, how your UA-cam channel started, etc.

It’s not very exciting but sure. My schedule is pretty tight for the next few weeks though. Maybe we could try something in late July?

Why such a big difference between times, 4 hrs then 1 hr maybe 4 then 2 then 1 would have given you a better idea on flavor and crust. Maybe.
There actually are 4 different times in the video.
