Thanks for another great video. I've done pizza on my pellet grill with mixed feelings. When I used the pizza stone the bottom got really dark but when I put one on a round pizza wire rack it turned out great. That smoke flavor really added to it.
I get pre made dough at Walmart. I dont have to let it sit overnight in the fridge unless its frozen. I just put in a container and let it get to room temp.
A little semolina on the board goes a long way to keep from sticking in the beginning. Also, rest the dough out of the bag for at least three hours to proof and develop gluten.
Each time I try to use my store bought dough, it always ends up too thin, and I don’t have a proper pizza oven so it won’t cook the crust properly at all. It usually turns out soggy or just not brown on the top while the bottom gets sort of crispy. Any tips? I use what I believe is a steel pan with holes in it, sometimes preheating it.
Matt... Another place you can get pizza dough is at Papa Murphy's and it is already spread out on a paper tray and sealed in cellaphane. I learned a hard lesson though the first time. DO NOT cook your pizza on their paper tray though in a Blackstone Pizza Oven the heat is just too high. The outter edges of the paper tray will start to burn and the pizza dough won't be done all the way. What I did this last time was to spread Semolina Flour on my pizza peel and then turn the paper tray upside down with the dough facing the peel. You have to work the paper tray loose from the dough a little at a time. But if you take your time it will release nicely. Then just build you pizza directly on the peel. The Semolina Flour allows the pizza to slide off the peel into the oven real easy. I haven't tried Dominoes to see if they sell just the dough by itself yet. One question Matt where did you get your pizza dough boxes from?
Seriously, Pizza is a 3 part system, 1) Dough, 2) Sauce, 3) Toppings. I've NEVER found a store bought Dough to be anything other than awesome...it's ALWAYS the sauce that ruins it for us...we like a bold flavorful sauce. NONE of the Jarred sauces work for us. Blackstone has ANOTHER (?) Pizza maker?...ummmm?

After putting the dough balls in the fridge for 24 hours, did you let it rest outside the fridge to come to room temperature before making the pizza?
Yes, around 2 hrs before I bring those out of the fridge to get ready.
