Today, I’m trying North Korean noodles for the first time! Called pyeongyang naengmyeon, it’s similar to South Korean naengmyeon but the noodles are tender instead of chewy, and the broth is a lot lighter.
Really clean tasting and beautiful broth. It’s both slightly beefy but also has the natural sweetness /earthiness of buckwheat flavor in the soup somehow.
Highly recommend! Definitely worth a try.
