I remember snaffling a brilliant Kedgeree at the RCHQ Festival in August 2018 - couple of young lads were cooking up a wonderfully huge, delicious pan of it on one of the food stalls down near the main stage in the meadow ... Looking forward to happy days like that again :)
Kedgeree, a British Indian dish is a reformed version of Khichadi. I've found many recipes in YT but respectfully they don't know how to play with the spices. Your recipe has that balance and appears to be aromatic.
Nope without smoked haddock you haven`t got a Kedgeree, Its like having beef gravy instead of Bolognese sauce and calling it Spaghetti Bolognese it just wont do.
This is about our current situation in lockdown, where things like smoked fish isn't always available. I'm sure, as a trained chef Hugh knows that smoked fish is more traditional, but he's giving people ideas about how to use leftovers. Maybe a more positive comment would have been better than being a smart-ass!
Thank you for your efficient, informative, and enthusiastic lesson on kedgeree. We wanted to find a nice and easy recipe and you delivered.

Yum. I didn't know you'd done a lockdown kitchen Hugh. Hoping I've got all sorts to catch up on. Thanks
Because of you I dream to move from the city!
That looks delicious. First thing I thought was how good that would be after Christmas with Christmas dinner leftovers. Yum!
i've been your fan ever since i was a kid
i remember binge watching river cottage first season on tv great to see your face again haha my man
The pre cooked cold rice is a clever touch, I guess it helps prevent the Kedgeree getting too stodgy (like when cooking Chinese fried rice?)
One of my fave comfort dishes
Hugh: cook till they're nice n golden
Me: cooked them till they're nicely burnt
love your videos!!
Love Hughs recipe.
can't believe you just cooked khicuri..It's a Bengali authentic food, glad found your video
He didn't. He cooked a British dish called kedgeree.
Great filming Freddie.
Very nice 👍
Did you fry the onions in butter or oil?

Kedgeree is a British dish with, as you say, Indian roots. They can use any spicing they want.
I just cheat and use curry powder like Hugh.
was it pre cooked rice ?
What tinned fish
Some fresh coriander would be nice
I say, NO roadkill old chap 🤔...

That’s my favourite way....smoked fish.
Great video. I love the music but would lose it, or lower it a little
As an Indian, I can't understand the attraction to this dish. It's like a crap version of kitchari/pilau
Where is the recipe mate?
Tasty looking food but PLEASE cut the background music from this video....so annoying & intrusive & makes it harder to hear you speaking.
Cut background music
I like it 🤣🤣🤣
Nothing more irritating than music over commentary, very disappointing.
