2 cup of My Keto Bisquick mix
• Keto Copycat Bisquick ...
1/3 cup heavy cream
1 cup water
1 egg
2 Tbs melted butter
Griddle is 300 degrees! VERY important!
If you make it hotter they burn and lower they do not cook through!

It's so easy to thin with low carb milk of choice until you get the batter consistency that you want. I have to make two batches a week. My kids kept stealing them, so now this is the only waffle/pancake recipe I make. Tastes just like wheat flour.
The pancakes look delish. For syrup, I have been melting a half stick of butter and mixing in Bocha Sweet powder to taste (I am sure other sweeteners would work fine) and a dash of maple extract. It is a rich and buttery sugar-free "syrup" that doesn't taste like sugar-free crap at the grocery store.

I made the pancakes for my family today. My teen daughter, who will absolutely refuse to eat something she hates ate every bite! When I asked her what she thought about the pancakes mumbled " not bad". That is high praise! BTW, the batter does thicken if you let it sit. I thinned out the batter with 2 tsp. of vanilla extract.

Success! I made this recipe with the NSKF 2.0 cup for cup as you suggested. I made some minor changes, used half allulose and half monkfruit and erythritol sweetener. I also half the waffle mix but used the whole egg. I made about 4 waffles and they were so good. I would not know they were keto just by taste. Thank you so much for making my journey with keto easier.

Quick Tip- cut your waffles and pancakes in BITE SIZED pieces first-----then pour on your syrup! Each bite will be covered in syrup!! YUMMY

I used your mixture last weekend to make keto pumpkin waffles. They were by far the tastiest keto friendly waffles. I used my Dash waffle maker and they swelled same as yours and I thought I did something wrong with the recipe. I just put something heavy on top of the Dash to hold it down😄. Worked perfectly!!

Our old one only made two at a time, this one makes four! Nicely sized 1 inch thick which are lovely! Now the kids don't have to wait as long to eat our weekly waffle breakfast and everyone's are hot if we wait and eat all together! Setting 3 seems to work perfect for golden brown. Be sure to pour the batter in the center of each waffle square, not the center of the iron like the novice that posted the scorched waffles photo. About a 1/4 to 1/3 cup of batter in each seemed to work well for us. We tested making just one at a time so we could use all the remaining batter and it made it just as fluffy and golden as when we made 4!
I made the pancakes and the waffle in the Dash.. thought there was something wrong in my copying the recipe... BUT, after watching this I now know I was rushing the pancakes and needed the toaster part for the waffles... thanks for clarifying "HOW" to make the product that you get properly!!
I tried your cakes and cookies flour to make pancakes before seeing your bisquick recipe and pancakes/waffles recipe. Not good but now I know where I went wrong. Will be making them this weekend for my week breakfast. I made your waffles using my busted old faberware waffle maker. I only got 6 waffles with a batch due to the waffle maker size. Batter was a tad finicky or should I say delicate in that I had to leave them in longer so it wouldn't crumble. But once I figure that out! These were fantastic. I packaged the others for the freezer and toasted them the following morning and they were just as great. Thank you a thousand times over. They had a nice crisp and were tasty. They weren't heavy for an added bonus. Next plan is to try biscuits with this mix.

The waffles I made from this recipe came out amazing! You’d never know they were keto or even gluten free! I’ve made countless keto and gluten free waffles and pancakes through the years and these were hands down THE BEST! Thank you, Victoria!
Notes: I did my waffles on a full size waffle iron so I didn’t need to hold down the lid or toast them after. I always add a teaspoon of vanilla and a dash of cinnamon to all my waffles.
Also, I tried doing the pancakes without a temperature controlled griddle. Don’t try it!

These are better than the real thing, from “regular flour” the pancakes ! I haven’t done the waffles yet, but oh my gosh these remind me of pancakes when I was a kid, and that flavor got lost…I believe it’s the lard, but I’m not sure, but oh my word. So so so good! Thank you Victoria! 😋💕

I made these and was pleased overall with the results! I did add another 1/3 cup water and they were still a lot thicker than your batter. Seems like a few people in the comments had similar issues (doughy or wouldn't cook comments) so hopefully we can figure out what else to tweak. Your 300F instruction was helpful, I found I had to adjust my burner frequently to find that spot, using an inexpensive infrared thermometer.
Also, I've used both of your bread flour recipe and this all purpose flour. I initially went with the ingredients I had on hand, using Anthony's oat fiber. That was a mistake. I've since used the Life Source Oat Fiber you recommended and it made a large difference in taste and a small difference in texture, both for the better.
You might try weighing the xanthan gum on a jewelry scale rather than a regular kitchen scale. The jewelry scale weighs finer amounts (closer to exactly 16 g) so you end up adding less xanthan gum, which an excess of, even a little, I have found makes the mix heavier. Just a thought…

So far, my favorite sugar free Maple Syrup is ChocZero's, but you have to order it online. My favorite in store sugar free Maple Syrup is Log Cabin. That stuff is good!
That Log Cabin SF has a bunch of really bad ingredients that cause problems (aspartame, sorbitol, sodium hexametaphosphate). Sprouts has more keto syrups--I like Wholesome Yum Maple made with allulose (but expensive) Amazon has it also, trying next Livlo sugar free (allulose) off Amazon (had a discount that day). Tried Lakanto in the past but I can't handle erythritol anymore.

@@marilynpedersen8293 you have to keep checking as I did order it last week and it went off sale again for a day and came back as available. As of Fri and Saturday it’s available. Good luck!! Also read the posted comments or questions on Amazon and some will tell you if it’s fine and white and taste isn’t bad. One company use to get the tan version and switched to the version we need better quality.

I bought an electric griddle because I felt I couldn’t keep the temp stable at 300 on my stove. However now that I have the griddle with temperature dial I couldn’t keep the temp stable either. It seems wherever the coil beneath are the hot spots. I found using the same batter in my mini dash waffle worked best but I miss pancakes. I’ve resigned to waffle making instead and happy I don’t have to use cheese to get crispy waffles. 👍🏻 to the batter 👎to the stove and griddle method ❤️also fyi I was patient making the pancakes

Made copy cat recipe for waffles and didn’t have lard and 🚫crisco so used my bacon 🥓 grease😂. Very edible 😋 like two for the price of one.

I wonder if different sources or batches of xantham gum have different, ‘strengths.’ I’ve been getting some ‘wet’ or slippery results (I weighed meticulously). But I am IN LOVE WITH YOUR FLOUR… LIKE… OMG😍🥰😍… So I’ve tried it several ways, for pancakes - including this recipe and some extra patience... In one case I let it cook for like an hour, just to see, but the ‘wetness’ never went away. I have used rice flour (a small amount… still makes for ‘low enough’ carb for me) in some things and love how it helps MY bread not deflate. But pancakes and waffles… wet wet wet. So the answer… finally… shoulda been obvious from the start… has been COCONUT FLOUR. I rarely use coconut flour, as I’ve found every recipe with it just way too dry. (Yeesh, what a never-happy complainer I sound like 🙈). So… “duh” on my part. I just make it an added ingredient, and finally, fluffy and scrumptious. My husband has declared them the best he’s ever had. Like… EVER. Especially with the maple cream sauce I make with your keto condensed milk (also a great thing to keep on hand).
I started low, but ended up, for pancakes, with equal amounts, your flour and coconut. I’m next going to try using the coconut flour instead of the the rice flour add, in my bread, etc., which would bring that 4g/slice carbs back down (and probably save money). That’s already one of the things I love about your flour, even though I know eggs have been a whole ‘$ thing,’ lately - but the amount in your flour is less than I was using before the gift of that amazing stuff labelled, “VKF” in my freezer.❤

Hi Victoria. I’m so thankful for you and your Keto recipes. Bless you! I’ve tried this recipe for the second time and I would like your opinion. I could not get your recommended ingredients here in Nova Scotia so I’ve bought other brands. The issue I’m having is that the batter is so thick that I’ve had to add a LOT more water to get the same consistency of batter as you. Now when cooking they are staying very wet on the inside when the outside is done and crispy. Do you suppose I should not add any extra water and just go with it? I really hate to waste ingredients so I’m eating them no matter what, lol

Hi :) so I have cakes and cookies all purpose and the self rising bread flour.
They both have oat Fiber NOT oat flour. Also they both have 36g which equals 3 Tbs of baking soda. Both flour recipes are in their description box. The cakes and cookie all purpose is most things like your traditional all purpose flour and the self rising if for bread and stronger textured foods

I don't use alot of Almond flour due to Oxalates. Instead of using 3 cups almond flour, I used 1 cup each of Almond, Sunflowers seed flour + 'Miracle Flour' brand of Lupin flour. I worked great for me!
