This recipe was wonderful I did tweak a few things though. 1. I substituted the regular smoked bacon for Oscar Mayer Smoked Turkey Bacon. 2. I only used 1tbsp of hot sauce instead of the full amount suggested. 3. The hot smoked paprika reduced to 1tsp. 4. Swapped the ground beef 85% lean ground turkey meat. I reduced the spicy ingredients I tasted a little of the hot smoked paprika it was mild at first then the heat kind of snuck up on me.

I am a Brit, When I was a kid, I grew up with American friends, I have had dish, that my friends mom used to make ALL the time…. And my tastebuds have yearned for that meal for AGES…. That was of my fav meals as a kid… but I never knew what it was…. 27 years later, thanks to you, I will *_FINALLY_* be able to make that dish. So Thank-you for sharing this recipe..! Store-bought Hamburger Helper is a box of noodles and seasoning that is added to ground meat (We call minced meat ground meat here). Hamburger is specifically ground beef, but other ground meats are readily available here (turkey, pork, and chicken are in every supermarket I've been in, and lamb, venison, bison, etc are less common, but growing in popularity). Any restaurant in the US that sells a hamburger will make it from beef unless otherwise stated.

To Address the Ground meat=hamburger question. It's due to lazy American English! Ground beef used to be called: Hamburger Meat (because it was used for hamburgers. Then it was just shortened to hamburger. "hamburger helper" was marketed as a way to spruce up (or help) plain ground beef (hamburger meat).

Its pretty easy, just what you see in the video…sautee onion with salt and pep, add garlic, brown the meat, add wine and reduce, add chicken stock hot sauce heavy cream, add pasta and simmer till al dente then stir in cheese and chopped scallion
The idea behind Hamburger Helper was that a busy mom could get a meal on the table fast and cheap with not too many ingredients or cooking knowledge. This is the opposite of that. My mom never made it but my friend’s mom did and even as a kid I thought it a waste of time. This just seems so heavy and time consuming.

It looks like regular American cheese, it has sodium citrate which makes it really creamy along with what looks like shredded cheddar cheese.
