Another great one Baidawi. From my experience I find Country Pride and Nutrimix are great for bread cakes and pastries..Ibis is perfect for all bread related products.
Ibis and all flour made/packaged by National Flour Mills always has quite a few lumps and needs whisking or sifting. More lumps than Country Pride. I am not sure if this is the packaging or an additive that reduces clumping in the flour.
Well this was a great flour and really good experiment. You know I'm not a Baker hahah but I saw the difference in the grain of the Bob's Red Mill immediately....the wheaty smell is a huge plus too but dah price point...it hard 😅 Happy to see the Ibis won, so I could save some coins
i can tell the outside of bobs redmill is dryer but the inside is more moist where ast the outside of the other us less dry and also lest moist on the inside
It maybe bleached but it ain't brominated, glyphosated and bioengineered by farmer bill, at least not yet. Count your blessing Trini. Send me your ibis blessed country and I'll send you all the horrible red mill flour you want as I live in Oregon home to bob's red mill flour and have to use the very expensive King Arthur USDA organic flour if I don't want to feel sick after. Still not as good as ibis.
I love your experiment.. learn so much from you ...as I learn to make bread during lockdown here in Bklyn ,NY.. That Bob's flour is ridiculous.. I would buy all of his other product's not that flour. Expensive is a joke.....I grew up with my mother using Gold Medal or the store brand from the grocery..and that what I stick to! But thank again for your videos. Continue success in all you do and have shares with us ..
I wonder how the bob's would compare if these were measured by weight and not cups. I'm assuming a finer milled product would have more product in the cup so the water : flour ratio would be off from the start and as you're used to working with the ibis you already know the flour : water ratio would be okay for that product. I know the method is chosen to mirror what most folks have in their kitchen but just a though i had while watching.
That's a great question and suggestion. I have a kitchen scale but when I'm doing any baking video I like to use cup measurements to keep the content relatable. But by weight would definitely be more precise. Might try it again like that and post the results to social media. Thanks!
Badawi, this was a excellent video, bleached flour is treated with chemicals that speeds up the aging process, whereas un-bleached flour is left to age naturally thus (as you picked up) retains the natural wheat flavor. Health wise un-bleached is better. But I also agree with you at the price point Bob's Red Mill comes in at, maybe not. Question: if they were both the same price, would you switch to Bob's or stick with Ibis?😊 Badawi, would you do a segment on gluten-free bread? mmhmm.😊
Tbvh if it was just 2x the price I would say it's worth it. But at 4x it's hard for ME to justify. But I'd never discourage anyone from making that choice for themselves. It really has a lovely aroma and taste.
Did you put lard as well in the foreign brand as well? I did not see you add it in. If not, then it will feel harder to the touch. Let me know please thanks. Love all of your videos.

Have you ever baked with wheat flour (non-white)? I used it in dumplings once but not bread. Not a fan of the all wheat so I do half n half now.

Wouldn't you rather cut the top of the dough to get a controlled crack than have the bread create its own crack in the oven.
