INGREDIENTS:
FILLING:
Olive oil
150g or 1 white onion, diced
150g or 1 large/2small poblano, diced
20g or 5 cloves garlic, minced
Salt
1.5lb/700g smoked brisket
350g/12oz pepperjack cheese block, shredded + additional for topping
350g/12oz medium sharp cheddar cheese block, shredded + additional for topping
12 corn tortillas, warmed
ROJA SAUCE:
60g (1/2c) paprika
60g (1/2c) chili powder
10g (1.5T) cumin
4g (2tsp) dried oregano
1L/quart beef broth
15g (2-3T) beef bouillon
450g (16oz) canned tomato sauce
15g (1 1/4T) brown sugar
25g (1 3/4T) white vinegar
5g (3/4tsp) salt
LIME CREMA
200g (3/4c) sour cream
50g (1/4c) milk
Zest of 1/1 lime + juice of ½ lime
Pinch of salt
Stir to combine. Add more sour cream to thicken or milk to thin if needed.
INSTRUCTIONS:
Heat a drizzle of olive oil into a pan over medium heat. Add in diced onion and poblano, minced garlic, and a pinch of salt. Cook until onions have softened and are beginning to take on color.
Cube or shred brisket then add it into the pan with the onions and poblanos, breaking up the beef and combining with the onions and poblano as it heats through.
In a separate pan over medium high heat, drizzle in about 1/4c or 60g olive oil. Add paprika, chili powder, cumin, and oregano. Bloom spices in the oil until fragrant.
In a separate container, stir bouillon into broth then stir beefy liquid into the pan with the spices over high. When combined, stir in tomato sauce, brown sugar, and 5g or 3/4tsp salt and vinegar. Bring to a hard simmer then reduce heat to medium-low and reduce for 15 minutes or until reduced by about 50%.
When reduced, build enchiladas by pouring just enough sauce into the bottom of an 8”x13” baking pan to coat the bottom.
In a separate shallow container, coat each tortilla on each side with the red sauce, fill with a pinch of beef filling and each of the cheeses. Roll and place seam side down in the pan. Repeat with all tortillas and top with additional cheese.
Bake for 20 minutes in a preheated 375F/190C oven until cheese is melted.
Serve and top with lime crema and pickled red onions if you've got em.

Uf, I`m torn, I love pizza a lot, but a great piece of meat, a good home grown chicken roast for example, with fried young potatoes (whole - so really young) and a "šopska" salad would be the thing... yeah, that.
My grandma always made the best chicken pie. No veggies, just chicken, a thick broth with celery seasoning, chopped boiled eggs and a pie crust for the top. It took me years to get that flavor after she passed. But I got it. I could eat it morning, noon and night and be in heaven. Love these videos with you two. ❤️
It’s a tossup. Either grilled ribeye steak with a loaded baked potato and asparagus (French silk pie for dessert) or a couple of chili dogs with onion rings and a root beer float.
A huge bowl of rice. I'd eat one grain a day and therefore extend my life by years. Can't die until you've finished your last meal, lol.
That's easy. Brisket (or pork burnt ends) Stuffed Sopapilla with Christmas Chile sauce all over the top. Side of fresh made pinto beans and pickled salad.

For anyone who's never watched, Ethan is an absolute rockstar when it comes to practical kitchen advice. If you're a Brian fan, he's neck-and-neck(figuratively, anyway) with Ethan for home kitchen gold, but less recipe-based.

Brian is a little taller than average... about 6'3"... the other guy is much shorter than average for a male... probably 5'4" or 5'5".

I watched a vid recently of a visit to a Ramen place that everyone is losing their minds over and the cranky and a bit overbearing owner was insisting the bowl of noodles had to be eaten in a very specific way and within a very specific time frame and....🤨🙄😬...guy, it's a bowl of noodles....
@brt5273 I mean, there sometimes is a "proper" way to eat things. Like sushi is usually eaten in a particular order (from lightest tasting fish to most intensely flavored fish) so that you can taste the subtle flavors without overwhelming your tastebuds. And from the little I know about real ramen is that it should be eaten fairly quickly, though I couldn't tell you if that's for good reason or just tradition. But sometimes tradition can be fun, too. It's a great way to interact with cultures across time and space
In the ‘80s my family made a wacky Seventeen magazine enchilada recipe with kidney beans and rows of sliced black olives on top. Still turned me into a huge enchilada fan.

I loved this collaboration, you and Ethan and pretty much the only two "foodtubers" that I watch on a consistent basis, you because your recipes are so goddamn good and Ethan because his food science videos give me big Good Eats vibes. Hopefully you two will get another chance to work together in the future. I also hope you had a good time in Texas, I know it's hot as hell here but hopefully that didn't prevent you from enjoying yourself!

I'm exactly 6' and can obviously see Ethan's elbows barely reach a standard kitchen counter so it's not hard to figure out. Ethan is barely 5 foot on a good day.

@@chriswhinery925 You can see in some shots that the counters behind them are at a much more reasonable height, and theirs is a different color, so it seems like a portable raised work surface. Ethan would just rather look short than make Brian hunch over. King
@@pilkuu3128 The part that kills me is that Brian is cooking off of the electric skillet, so he would have been totally fine on a surface that was a good bit shorter. This seems like a lighting choice, but for a better composed shot I don't think an apple box would hurt a shorter partner.

To whom it may concern: I use all that leftover roja sauce for Chilaquiles, and they're amazing. Any leftover roja sauce can also easily be frozen for later.

I know everyone else is saying this exact same thing, but dear God, I did not realize there was this big of a height difference between these two individuals. I didn't think Ethan was that short and I didn't think Brian was that tall.

Did anyone else notice when Ethan stops chopping the meat he leaves the knife handle hanging over the cutting board and Brian pushes it back for safety reasons? Brian is a trained chef who has worked in many restaurant kitchens. My guess is leaving the knife handle hanging over the board is a nono. Much like leaving a hot pan handle extending over the stovetop when you have little children is not safe because they will reach up and grab the handle and pull the pan with hot food off the burner.
Damnit, Bri, you could have at least had him on a step stool

I swear, this video would be half as long if you cut out all the extraneous “like” both of you keep saying; for the over/under about honey crisp apples, Ethan says “like” about 8 times in, like, 30 seconds (and i guess it’s transmittable because i just wrote “like” when it wasn’t, like, necessary… oy! I did it again!) Once i started noticing it, i REALLT started noticing it!
