- I'm a big fan of coffee. For the coming mid-autumn festival, I came out with another coffee flavored mooncake - Baked Mocha Mooncakes! I did my first mocha mooncakes two years ago, and the video link is in the below.
It took me few times to get this recipe right. I had to balance the chocolate crust and coffee paste without letting them overpower each other, make sure the pattern of the mooncakes comes out clear enough, etc. The end result tastes heavenly and I am very proud of it!
我很喜欢咖啡,两年前就做过摩卡月饼的视频(视频链接在下方)。今年再次挑战摩卡月饼,这次来个不一样的,饼皮是酥酥的巧克力口味,包着满满咖啡味的内馅,非常喜欢,喜欢咖啡的可以试一试。
3合1咖啡粉的牌子可以用视频里的,或任何你习惯的牌子。我偏爱马来西亚和越南的咖啡粉,喝过多种牌子,觉得这两个地方出产的咖啡粉多数都不会踩到地雷。
Ingredients:
1)Butter - 50g
2)Icing sugar - 20g
3)Honey - 30g
4)Egg yolk - 1 (17g)
5)Cake flour - 150g
6)Cocoa powder - 10g
7)Baking soda - 1/4 tsp
8)Milk - ~2 tsp
9)Mung Bean Paste - 200g
10)3 in 1 coffee mix - 20g
11)Hot water - 1 tbsp

I wonder how u make the cocoa skin into a dough.. no matter how long i mix them, it is still falling apart, cant hold as a shining dough. I follow exactly the recipe u shown

You can use 90% all purpose flour and 10% corn starch to replace cake flour. For this recipe, use 135g of all purpose flour and 15g of corn starch.

可以,但加了咖啡粉會降低甜度,所以弄好後試一試餡的甜度再看看需不需要調整。

蜂蜜可以用什么来替换呢?糖粉可以吗?
蜂蜜是液體,可以試一試用糖漿,玉米糖漿或水饴代替。
如果绿豆馅是买的可以用纯咖啡吗无糖份的
可以。
但是无糖的咖啡粉本身是苦的,会降低甜度。做好的馅是你能接受的甜度就OK。
