Thank you 🙏 Yes shaoxing cooking wine and and clear Chinese rice wine can be hard to find. If possible, I recommend only getting shaoxing wine as that is a staple in Chinese cooking.

Good question 😀 So if you added oil first or before any of the seasonings, the fat from oil creates a barrier or cover that prevents meat absorbing other seasoning ingredients. 🙏
It's true that tomato ketchup is most common. But depending on where you live there are varieties such as carrot ketchup even squash ketchup. I just wanted to be specific 👍

Yes, it's the same ingredients, just different measurements. Usually in restaurants the sauce is sweeter.
