Battery Health percent is not 100% accurate try using the shortcut I mentioned in this video and look for the charge cycle. The more the charge cycle is the more your iPhone's battery is degraded.
Well, no need to worry regarding charge cycle. What matters is the battery health. If that is below 80% then it's time to change to battery of your iPhone.

It does not matter if you have drained your iPhone to 0. If you have charged your phone to 100% and depleted, it to 50% and the again charged your phone to 100% it will be considered as 1 complete charge cycle.
I would suggest that sometimes the battery health measurement might get glitched, so if you have completed 58 charge cycle on your iPhone then I think you don't need to worry.

I think, when you changed the iPhone's battery your Battery Cycle Count did not get reset, hence the number you have is the total count of the charge cycles you have completed on the device.

Okay, let's take one more example. So, if you charge your iPhone till 80% for the 10th time. That means you have charged your iPhone 800% (80% X 10 Times), which means your iPhone has completed 8 Complete Charge Cycle.
