Seems like he was using the sushi bazooka incorrectly, i think he skipped the step where you're supposed to put the cap at the one end first before extruding the sushi to slightly compress the roll.
Yes! The first two were done so incorrectly! Nigiri mold only presses the rice and the bazooka had to be twisted and squashed with the cap on.
But his whole point was that if you just make it by hand you won’t have to go through the process of learning how to use the tools properly

So even though I originally learned to make hand rolled sushi, I do have the bazooka for when I need to make a lot of rolls fast. It's easy and cuts my time in half. I am really mystified by how much trouble the chef is having.
He didn't try. There are many good UA-cam videos on sushi bazookas. All seem to give very thick rice layers. We were hoping that a real chef who knows maki could show us how to make it live up to its potential. But no 😢
