The video shows it locking onto a Presta valve. Does it also lock onto a Schrader valve? I'm thinking of adding theses to some of my bike pumps. So I need it to be able to
1) lock
2) easily switch between Presta and Schrader

Yes, this is also able to be used and locked on to Schrader valve stem.
What fitting do I need to connect this to the ARB air compressor?
Which ARB model? If it has a hose with standard 1/4" M-NPT fitted end, you would not need an adapter. Depends on which model and what the hose connection is like. Can you send a link to the compressor?
Hi, when I disconnect, I hear a small air sound. Is that the air already inside the chuck or is that air leaking when disconnecting?
That is just the detachment sound from the presta valve. Presta valves are very finnicky as you know, so you just hear that air sound when disconnecting, but it's not any measurable amount of PSI lost. Also, just FYI we launched a new "presta only" chuck recently: www.amazon.com/dp/B09YL6N85V

I just bought the Lightning L3 model and I am testing it out. I really hope I have no issues because Presta is such a pain.
Do I really need to buy your Presta Only model? - I thought this was suppose to be simple.
