I think we can't really tell until we watch it. People change their mind all the time, first they say its not going to work, until it does, and you see people making 1hr video about how brilliant it is and how brilliant it is and why it works that they don't adapt it faithfully, and the same people would start saying stuff like we already had the movie and we have the book, it's nice and refreshing to have a slightly different take but still has that familiar magic and whimsy of the book or whatever. I think the most controversial is probably casting the black actor for Snape, and while I really want to stay open minded, I think Cillian Murphy would make a great Snape. We've already seen him in peaky blinders, and I think he can play the role if they decide to go more book accurate Snape. I like Alan Rickman, and I think for that version of Snape he's perfect for it, but I never felt the part where he's a deatheater believable, I mean it seems like his true allegiance has been obvious all along that even when they reveal he's a deatheater you never worry about it. Cillian Murphy is skinnier and he already kinda looks like he doesn't have enough sleep, so with some make up I think he can really have that sort of unhealthy look with the skin and the greasy hair, and also we already know how well he plays a criminal that can be sympathetic.
when I found out who is playing Snape I was immedately out , I think its the best if it gets cancelled, they just dont understand what people want , is it really so hard to make characters book accurate?? And its not like there were no black characters, Lavender was BROWN ....for example
Race swapping Snape will definitly make me say its a bad adaptation but its not going to make it a bad show. Like you said, it'll just make me wonder why they didn't just add a black character who wasn't in the books if it matters so much to them. Anyway, if thats the ONLY problem with the show and the actor is good and faithful in every other way, we will laugh it off and keep watching. But if the show sucks, this will be considered as the first sign of the HPocalypse.

As you said about the script and approach I really think they will change a lot of things, that’s just my opinion, not even close to the truth. Rowling does have final say so I doubt their change too much from the books tho I could be wrong. Honestly I didn't care for the way the old trio turned on the women who made their careers, so I'm willing to give a new lot a shot. I would be optimistic and say it could lead to other series like the founders or marauders after if it goes well, if it make money their make more. Also wouldn't worry too much about any boycotts their didn't do much to stop Hogwarts legacy. lastly I don't worry about any casting rumours going around honestly its just ppl spreading rumours nothing for sure.
It’s pretty simple really, I will watch the first episode and if it doesn’t grab me the way the books and movies did at first then I am out. The second any canon changes, I am also out. Much like I did with Percy Jackson “accurate” adaption after I was burned with the movies 🤷🏻♂️
