    I forgot about Opah. You rarely see it in Florida fish shops. Years ago i did a seared rare opah with mango salsa!!! Soo good.

    Love the open mindedness in the chef’s philosophy of and approach to cooking. At the same time, they all owe a Golden State’s-worth of debt -- and credit to - the great Tommy Gomes; who, almost single-handedly put OPAH on the map in California.

      Any saltwater fish can be served raw. Don't do it with freshwater fishes, though. Higher risk of parasites.
