If it's made correctly with a nice shallow filling like I do, it's not over sweet and has a good balance between the crust and the filling. Hope this helps.

Like many others have said, I to believe in the integrity of old recipes. They should not be changed, I also believe, if you’re going to take the trouble to make the recipe, you should take the time to source ingredients. I went out of my way, and ordered golden syrup and, black treacle. It’s worth it.😊

I live in the canaries and have to buy golden syrup at the local brit store very expensive, usually have a shipping order for any friends or family visiting lol but will definitely have a go at your homemade syrup, many thanks for your wonderful no hassle recipes

I'm afraid lard in much more than just rendering down pork fat. The fat has to come from certain areas of the pig, such as the leaf, that's the fat round the kidney area.Where do you live?
Thanks for mentioning the baking powder for plain flour. Self raising flour isn't easy to find in some locations so I sadly have to ignore recipes that call for it without giving the alternative. I've seen online cooks suggest alternatives for different ingredients but not many think to offer baking powder amounts for plain flour. My bugbear? Dumplings. I'd love a plain flour plus baking powder version for them. 😊

Caroline, I'm sure you ARE the bees knees even without my recipes. When you make this, don't be tempted to put extra filling in if it looks too shallow, this is the traditional method and it makes sure the tart is not too sweet and sickly, your should be able to really taste the lemon too. You are the first person I’ve seen keep flour in a shaker. I have done that for over 60 years and have found it very handy. Another lovely recipe.

That looks tasty… but what is self raising flour?
It's flour with the baking powder already incorporated. If you don't have it you will need to add 1/2 teaspoon baking powder to the recipe.
