I make a taco casserole with ground beef (chicken, turkey, pork, or some combo would work as well), a jar of salsa, onion, garlic, mexi-corn, black beans (lightly rinsed), diced green chiles, black olives, chili powder, cumin, cayenne pepper, black pepper, salt, garlic powder, onion powder, chedder & pepper jack cheese, and then cornbread mix on top. I cook the meat with the salsa, onion, garlic, & spices and then, in a casserole dish, layer the meat mixture, then black beans, mexi-corn, diced green chiles, black olives, & cheese, then layer again and top with 2 boxes of Jiffy cornbread mix (prepared), then bake until the cornbread is cooked all the way through. It is really good and if you want to serve it on top of some rice or on a salad, you can stretch it even further.

I then transferred the filling to a 9' x 13" and added the masa topping. You can probably tell from the video that there is too much food for the skillet he used. The flavors were pretty good. It made about 8 servings for me, and I'm a pretty hearty eater. If I make it again I'll make the following changes: 1. I'd cut the topping in half. It really seemed to dominate the dish. 2. I'll add a little broth to the filling. In the end, the filling was a little dry. This may also be the result of all the topping absorbing some of the liquid, which the first modification should help with. 3. I would bake it for 40 minutes without the foil cover. The topping didn't get quite done enough for my taste. Again, less topping would help it cook faster and more thoroughly. Based on my first attempt at this recipe, I'd give it a 7 out of 10.

You can serve it on top of rice (or salad) to make it go a little further too. That's what my family did with Chili when I was a kid (a trick they learned in Hawaii). We ate chili for like, a week. lol

The topping/crust is also just a matter of whatever thickness you're going to want, and if you want to make it super, SUPER easy, buy a box of Jiffy Cornbread mix, and follow the directions on the box (3 ingredients, super simple), and pour that over the top of the hot vegetables. Bake it for about 20 minutes, take it out, immediately spread the top of the crust with melted butter, and dig in. But even a beginner cook should be able to figure it all out without angst, seriously.
Me watching this a couple of yrs later and with a closer eye. I really think he had something. I just think he used WAY too much masa. Less masa and I think it would’ve a) cooked all the way. Only thing that didn't sit well with me was using cast iron and foil with an acidic dish. Increases likelihood on leeching metals and flavor as it is essientially now a battery.

Most tamales I am familiar with are wrapped in corn husks. I am sure some are done in banana leaves somewhere, though. :)

Oh my friend. If you’ve never had a banana leaf tamal, you haven’t lived. Way better than corn husk IMO. The banana leaf flavor permeates the masa.
