Mock apple pie filling | preserving cucuzza

  • Today I’m preserving the last of my cucuzza harvest. I hope you enjoy and y’all have a blessed day!☺️
    Mock apple pie filling
    24 cups peeled,and sliced zucchini
    2 cups apple juice
    3 cups white sugar
    1 tbsp lemon juice added to each jar
    1 1/2 cups brown sugar
    4 1/2 teaspoons cream of tartar
    4 tbsp apple pie spice or to taste
    1 tbsp vanilla
    Place all ingredients in a stock pot. Simmer 25 minutes. If you want to thicken it make a slurry with cornstarch and a few tbsp of water and add to mixture. Pour into clean jars, wipe rings, add lids and water bath process for 15 minutes.

    Bread and Pie Filling looks delicious !! I have to get back on track...I spent the weekend with my Son and his Family .We had a great time 😎

      Thank you! I’m getting tired of canning lol and with all the rain we’ve been getting the weeds are out of control! I’m looking for some good pear recipes if you have any. A friend gave me a bag full of pears that I need to can soon. 🤗

    I'm a clean as you go cook, can't stand a mess, it just seems to make things go smoother.
