    In Pennsylvania Dutch country we put the cut up onion in with the ham and the beans. If you don't have a ham bone like yours we use ham hocks. The other thing the Amish do is put dough rivals in the bean soup. They are just water and flour mixed to form a dough and then added into the bean soup about a half hour before it's done. Some people might call them dumplings. What ever you call them I'm not a fan. I wouldn't have one problem eating your bean soup.

    The only thing missing is some good chow chow! I just got a 5 qt. dutch oven and this is going to be the first thing I'll cook!!!

    My father used to do something very similar. He would use regular pinto, black beans, or any other beans that is cheap, cut up leftover ham, turkey, chicken, and let it boil all in for about 2 to 3 hours. Simple and easy for camping.

    I think I would cut up some onions, carrots, celery, a little garlic, and some dried parsley and thyme. I DO like the idea of eating a slice of yellow onion along with the soup. 👍

    I like to use chicken stock instead of straight water. It adds another layer of flavor.

    ham me give you more meat but Hawks have better flavor but then again I've only done it in a crock pot or on the electric stove

    Hoks make bean soup taste better then ham. But ham does give you more meat though and yes ham does give flavor as well.

    No self respecting person of Southern Appalachian Heritage would EVER, use white beans. There's a reason that we call them Northern beans. 😉
